{"id":41878,"date":"2016-09-22T15:08:55","date_gmt":"2016-09-22T19:08:55","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=41878"},"modified":"2016-09-22T15:08:55","modified_gmt":"2016-09-22T19:08:55","slug":"eggplant-tacos%e8%8c%84%e5%ad%90%e5%ab%8c%e3%81%84%e3%82%82%e9%a3%9f%e3%81%b9%e3%82%8b%e8%8c%84%e5%ad%90%e3%82%bf%e3%82%b3%e3%82%b9","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=41878&lang=en","title":{"rendered":"Eggplant Tacos<br>\u8304\u5b50\u5acc\u3044\u3082\u98df\u3079\u308b\u8304\u5b50\u30bf\u30b3\u30b9"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41879 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/30-2.jpg\" alt=\"30\" width=\"596\" height=\"428\" \/><\/p>\n<p>There aren&#8217;t many foods I don&#8217;t like.<\/p>\n<p>But I do respect other&#8217;s food preference, and I try not to push others (except for my own kids if we had any) to eat the food they don&#8217;t like.<\/p>\n<p>If you don&#8217;t like it, you don&#8217;t like it, and pushing them to eat it doesn&#8217;t help.<\/p>\n<p>The difficult thing about this is that if I like something I want my loved ones to enjoy it with me.<\/p>\n<p>So when Terry doesn&#8217;t like the food that I LOVE, I tend to try a little harder.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41880 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/33-1.jpg\" alt=\"33\" width=\"510\" height=\"717\" \/><\/p>\n<p>Terry doesn&#8217;t like eggplant very much, whereas, I LOVE eggplant.<\/p>\n<p>I used to cut eggplant into small pieces and sneak them into his favorite dish, but I stopped doing that because I don&#8217;t want him to not trust me.<\/p>\n<p>Now I tell him everything, what&#8217;s in the food he is eating.<\/p>\n<p>When I found this smaller eggplant, I thought this might work because it had a slightly firmer texture compared to the regular one and it had less and smaller seeds.<\/p>\n<p>I also cooked the eggplant twice (sauteed first, marinate, and then cooked again with additional seasonings), hoping to add extra layers of flavors.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41881 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/31-3.jpg\" alt=\"31\" width=\"596\" height=\"428\" \/><\/p>\n<p>Well, Terry ate, and he liked them.<\/p>\n<p>Yay!<\/p>\n<p>The overall taco flavors helped, I&#8217;m sure.<\/p>\n<p>And he was hungry, which I suspect was a big factor.<\/p>\n<p>But still, it was a happy moment for me!<\/p>\n<p><strong>Eggplant Tacos<\/strong><\/p>\n<p>canola oil<br \/>\n1~2 cups <a href=\"https:\/\/www.culinarytribune.com\/?p=41841&amp;lang=en\" target=\"_blank\">Yaki-Bitashi eggplant<\/a>, chopped<br \/>\ncumin<br \/>\nsalt and pepper<br \/>\n2 corn tortillas<br \/>\n1\/3 cup chopped onion<br \/>\n1\/4 cup chopped tomato<br \/>\n4~6 jalapeno slices from jar<br \/>\ncilantro<br \/>\nlime wedges<\/p>\n<p>1. Sautee chopped Yaki-Bitashi eggplant in oil. Sprinkle cumin. Mix. Taste. Salt and pepper if needed.<br \/>\n2. Place the sauteed eggplant, onion, tomato, jalapeno slices, and cilantro on warm tortillas.<br \/>\n3.
