{"id":41645,"date":"2016-09-01T20:37:20","date_gmt":"2016-09-02T00:37:20","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=41645"},"modified":"2016-09-02T10:54:30","modified_gmt":"2016-09-02T14:54:30","slug":"portobello-japchae%e3%81%8d%e3%81%ae%e3%81%93%e3%83%81%e3%83%a3%e3%83%97%e3%83%81%e3%82%a7","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=41645&lang=en","title":{"rendered":"Portobello Japchae<br>\u304d\u306e\u3053\u30c1\u30e3\u30d7\u30c1\u30a7"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41646 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/13.jpg\" alt=\"13\" width=\"596\" height=\"428\" \/><\/p>\n<p>I took a little break from the blog because something unusual was happening to me!<\/p>\n<p>I kind of lost interest in food.<\/p>\n<p>It never happened to me and I had a hard time coping with it.<\/p>\n<p>I was still eating, but I was not excited about food, either eating or cooking.<\/p>\n<p>I tried to give myself inspiration by watching my favorite Food Network shows, going through food magazines, etc.<\/p>\n<p>And nothing&#8230;<\/p>\n<p>Finally, though, when I was listening to the MPR in my car on my way home from work, something clicked.<\/p>\n<p>They had an interview with an illustrator who recently published a Korean cookbook.<\/p>\n<p>While talking to the interviewer she was apparently demonstrating how to cook Japchae, and when I heard her pan sizzling, I knew this is what I wanted for dinner tonight!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41647 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/17.jpg\" alt=\"17\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/17.jpg 638w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/17-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>As soon as I was home, I walked to the local grocery store and picked up beautiful portobello mushrooms.<\/p>\n<p>I wanted to use portobello in place of beef.<\/p>\n<p>I didn&#8217;t have a lot of time to marinate the mushrooms, but it soaked up the marinade pretty quick, and it was not a problem.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41648 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/09\/12.jpg\" alt=\"12\" width=\"510\" height=\"717\" \/><\/p>\n<p>Loved tonight&#8217;s dinner.<\/p>\n<p>And, I&#8217;m happy having my old self back.<\/p>\n<p><strong>Portobello Japchae <\/strong> <\/p>\n<p>marinade<br \/>\n&#8211; 1\/3 cup soy sauce<br \/>\n&#8211; 1\/4 cup sugar<br \/>\n&#8211; 1 clove garlic, sliced<br \/>\n&#8211; black pepper<br \/>\n&#8211; a drizzle sesame oil<br \/>\n2 portobello mushrooms, sliced<br \/>\ncanola oil<br \/>\n1 onion, sliced<br \/>\n1 green pepper, sliced<br \/>\n2 carrots, julienned<br \/>\ncorn starch<br \/>\n100g cooked Korean sweet potato noodle<br \/>\nsalt and pepper<br \/>\n1 tablespoon green onion, chopped<br \/>\nsesame seeds<\/p>\n<p>1. Make marinade. Put all the ingredients in a plastic bag. Add sliced mushrooms. Make sure all the slices are covered by marinade. Let them marinated for at least 10 minutes.<br \/>\n2. Sautee onion, pepper, carrots in oil. Removed from pan.<br \/>\n3. Take the mushrooms from the marinade. Take excess liquid with paper towel. Lightly coat with corn starch.<br \/>\n4. Add oil to the pan. Sautee the mushrooms.<br \/>\n5. Put the vegetables back to the pan. Add Korean noodle. Continue to cook.<br \/>\n6. Add about 1~2 tablespoons of the marinade. Salt and pepper.<br \/>\n7. Serve with green onion and sesame seeds.<\/p>\n<p>*This is my own recipe and not based on her recipe.
