{"id":41612,"date":"2016-08-23T21:10:30","date_gmt":"2016-08-24T01:10:30","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=41612"},"modified":"2016-08-23T21:10:30","modified_gmt":"2016-08-24T01:10:30","slug":"miso-eggplant-rice-bowl%e5%91%b3%e5%99%8c%e8%8c%84%e5%ad%90%e4%b8%bc","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=41612&lang=en","title":{"rendered":"Miso Eggplant Rice Bowl<br>\u5473\u564c\u8304\u5b50\u4e3c"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41614 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/29.jpg\" alt=\"29\" width=\"596\" height=\"428\" \/><\/p>\n<p>I&#8217;ve probably said this a dozen times, but eggplant is one of my favorite vegetables.<\/p>\n<p>In the western world you see a lot of dishes where eggplant is paired with tomatoes, but everyone in Japan agrees that eggplant goes extremely well with miso (Japanese soy bean paste).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41615 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/31.jpg\" alt=\"31\" width=\"510\" height=\"717\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41616 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/33-2.jpg\" alt=\"33\" width=\"510\" height=\"717\" \/><\/p>\n<p>So here it is!<\/p>\n<p>Eggplant was first sauteed and then drenched in thick sweet miso sauce.<\/p>\n<p>Then, the miso eggplant was placed on top of rice and served with a poached egg.<\/p>\n<p>Absolutely DELICIOUS!!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41617 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/32-2.jpg\" alt=\"32\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/32-2.jpg 638w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/32-2-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>So I decided to use one of my favorite bowls to serve this dish.<\/p>\n<p>I love the organic feel and how beautifully it stands (tall and slender).<\/p>\n<p>This bowl was created by a local potter, <a href=\"http:\/\/peterjadoonathpottery.com\/\" target=\"_blank\">Peter Jadoonath<\/a>.<\/p>\n<p>He has a backyard pottery sale coming up in September, and if you live in the Twin Cities area you should check it out.<\/p>\n<p>I found this bowl at his backyard sale a few years ago.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41618 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/08\/34-2.jpg\" alt=\"34\" width=\"510\" height=\"717\" \/><\/p>\n<p><strong>Miso Eggplant Rice Bowl<\/strong><\/p>\n<p>canola oil<br \/>\n1 cup eggplant slices<br \/>\nsalt and pepper<br \/>\n1\/2 cup water<br \/>\n1 tablespoon soy sauce<br \/>\n1 tablespoon dark miso<br \/>\n1~2 tablespoon cane sugar<br \/>\ncorn starch + water for thickening<br \/>\ncooked rice<br \/>\n1 poached egg<br \/>\nchopped scallion<br \/>\ndried chili threads<\/p>\n<p>1. Sautee eggplant in oil. Salt and pepper<br \/>\n2. Add water, soy sauce, miso, and sugar. Stir and continue to cook until miso and sugar dissolve.<br \/>\n3. Add corn start and water mixture to thicken the sauce.<br \/>\n4. Serve the eggplant and miso sauce over cooked rice.<br \/>\n5. Place a poached egg.<br \/>\n6.
