Earl Grey!<\/p>\n<p>I ground earl grey leaves finely and added a good amount to the crust.<\/p>\n<p>It smelled amazing!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41317 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-3.jpg\" alt=\"60\" width=\"596\" height=\"428\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-3.jpg 896w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-3-450x322.jpg 450w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-3-768x550.jpg 768w\" sizes=\"auto, (max-width: 596px) 100vw, 596px\" \/><\/p>\n<p>The crust was filled with sweet yellow peaches with a sprinkle of currants.<\/p>\n<p>Isn&#8217;t this pretty?<\/p>\n<p>I know I said this many times, but I LOVE currants.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41318 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/55-5.jpg\" alt=\"55\" width=\"596\" height=\"428\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41319 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/61-2.jpg\" alt=\"61\" width=\"510\" height=\"717\" \/><\/p>\n<p>Earl grey flavored buttery crust, sweet peaches, and tart currants,<\/p>\n<p>This is absolutely delicious!<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41322 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/38-1.jpg\" alt=\"38\" width=\"596\" height=\"428\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/38-1.jpg 896w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/38-1-450x322.jpg 450w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/38-1-768x550.jpg 768w\" sizes=\"auto, (max-width: 596px) 100vw, 596px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41320 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/64-1.jpg\" alt=\"64\" width=\"596\" height=\"428\" \/><\/p>\n<p>It&#8217;s also super tasty when served with slightly sweetened Greek yogurt.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41326 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/55-6.jpg\" alt=\"55\" width=\"510\" height=\"717\" \/><\/p>\n<p><strong>Earl Grey Peach Galette<\/strong> adapted from <a href=\"http:\/\/cooking.nytimes.com\/recipes\/1016758-fruit-galette\" target=\"_blank\">this recipe<\/a><\/p>\n<p>crust<br \/>\n&#8211; 1 and 1\/3 cup all purpose flour<br \/>\n&#8211; 1 tablespoon ground earl grey<br \/>\n&#8211; 1 tablespoon sugar<br \/>\n&#8211; 1\/2 teaspoon salt<br \/>\n&#8211; 1 egg<br \/>\n&#8211; unsweetened yogurt enough to make 1\/3 cup with an egg<br \/>\n&#8211; 1 stick butter, cut into small pieces<br \/>\n&#8211; cold water<br \/>\nfilling<br \/>\n&#8211; 2~3 cups sliced peaches<br \/>\n&#8211; 1\/2~2\/3 cup sugar<br \/>\n&#8211; pinch of salt<br \/>\n&#8211; lemon juice from 1\/2 lemon<br \/>\n&#8211; 3~4 tablespoons cornstarch<br \/>\n&#8211; 1\/4 cup currants<br \/>\negg wash (1 part egg + 1 part yogurt)<\/p>\n<p>1. Make crust. combine all the ingredients except for butter and cold water. Add butter and then water and process in a food processor. Take it out. Form a disk. Refrigerate for a few hours.<br \/>\n2. Make filling. Combine all the ingredients except for currants.<br \/>\n3. Roll out the dough. Place the filling mixture. Fold the edges. Sprinkle currants. Brush egg wash on the crust.<br \/>\n4.
