{"id":41166,"date":"2016-07-14T22:08:24","date_gmt":"2016-07-15T02:08:24","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=41166"},"modified":"2016-07-14T22:08:24","modified_gmt":"2016-07-15T02:08:24","slug":"smashed-potato-salad-with-herring-and-dill%e7%87%bb%e8%a3%bd%e3%81%ab%e3%81%97%e3%82%93%e3%83%9d%e3%83%86%e3%83%88%e3%82%b5%e3%83%a9%e3%83%80","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=41166&lang=en","title":{"rendered":"Smashed Potato Salad with Herring and Dill<br>\u71fb\u88fd\u306b\u3057\u3093\u30dd\u30c6\u30c8\u30b5\u30e9\u30c0"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41167 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-2.jpg\" alt=\"60\" width=\"596\" height=\"428\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-2.jpg 896w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-2-450x322.jpg 450w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/60-2-768x550.jpg 768w\" sizes=\"auto, (max-width: 596px) 100vw, 596px\" \/><\/p>\n<p>A nice thing about being the cook of our household is that I can make whatever (mostly) food I like and the way I like it.<\/p>\n<p>Potato salad is a popular dish and everybody knows what it is, but it&#8217;s probably one of the dishes that everyone has a specific idea of how it should be prepared.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41168 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/50.jpg\" alt=\"50\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/50.jpg 638w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/50-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>There are a number of ways to make potato salad.<\/p>\n<p>Along the way you make many decisions.<\/p>\n<p>Large pieces of potatoes or small pieces?<\/p>\n<p>What other ingredients?<\/p>\n<p>Mayo or no mayo?&#8230;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41169 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/56-2.jpg\" alt=\"56\" width=\"510\" height=\"717\" \/><\/p>\n<p>I like a lot of other vegetables in my potato salad.<\/p>\n<p>There were always cucumber slices in my mother&#8217;s potato salad but I usually go for other vegetables.<\/p>\n<p>I like cucumber but it&#8217;s not my favorite thing in my potato salad (sorry mom!).<\/p>\n<p>This time I added corn and radish, both of which I got at the local farmers market.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41170 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/57-4.jpg\" alt=\"57\" width=\"596\" height=\"428\" \/><\/p>\n<p>Another ingredient I added this time was smoked herring.<\/p>\n<p>This one from Trader Joe&#8217;s is my favorite; Trader Joe&#8217;s has many other wonderful canned smoked fish and seafood as well.<\/p>\n<p>This addition of protein makes this potato salad a great main dish for lunch.<\/p>\n<p>If served with leafy salad or vegetable soup, that would be a wonderful lunch (or dinner) for me.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41171 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/07\/62-4.jpg\" alt=\"62\" width=\"510\" height=\"717\" \/><\/p>\n<p>I won&#8217;t bore you by telling you too much about my favorite potato salad, but I&#8217;ll share just a few things that are important to me.<\/p>\n<p>1. No mayo. We are on the 95% plant based diet (and Terry does not care for mayo).<br \/>\n2. Potatoes are lightly mashed so that they soak up tasty dressing.<br \/>\n3. Lots of vegetables, especially the ones that have crunchy texture.<br \/>\n4. Some kind of herb(s).<\/p>\n<p><strong>Smashed Potato Salad with Herring and Dill<\/strong><\/p>\n<p>2 tablespoons white vinegar<br \/>\n2 tablespoons sugar<br \/>\nsalt and pepper<br \/>\n3~4 cups bite-sized potatoes, cooked and lightly smashed<br \/>\n4 radish, julienned<br \/>\n2 ears corn, cooked<br \/>\ndressing (2 tablespoons white vinegar, 2 tablespoons sugar, 1 tablespoon canola oil, 1\/2 ~1 tablespoon Dijon mustard, salt, pepper)<br \/>\nfresh dill, chopped<\/p>\n<p>1. Mix white vinegar and sugar. Pour the mixture over cooked potatoes. Mix. Salt and pepper.<br \/>\n2. Place the potatoes on a large plate.<br \/>\n3. Put radish and corn kernels over the potatoes.<br \/>\n4. Make dressing. Combine all the ingredients.<br \/>\n5.
