{"id":39536,"date":"2016-03-24T16:39:19","date_gmt":"2016-03-24T20:39:19","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=39536"},"modified":"2016-03-24T16:44:39","modified_gmt":"2016-03-24T20:44:39","slug":"%e9%ae%ad%e3%82%ab%e3%83%84%e4%b8%bc-2","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=39536&lang=en","title":{"rendered":"Fried Salmon Rice Bowl \u9bad\u30ab\u30c4\u4e3c"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39537 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/27-1.jpg\" alt=\"27\" width=\"510\" height=\"717\" \/><\/p>\n<p><strong>Fried Salmon Rice Bowl<\/strong><\/p>\n<p>I made this for lunch last weekend, and Terry and I really enjoyed it.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39538 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/20-1.jpg\" alt=\"20\" width=\"510\" height=\"717\" \/><\/p>\n<p>And this was the inspiration for this dish.<\/p>\n<p>&#8220;Dashi&#8221;.<\/p>\n<p>Dashi is traditional Japanese soup stock made of dried fish and seaweed.<\/p>\n<p>This was made by our friend (he is American but has lived in Japan in the past), and he kindly shared it with me.<\/p>\n<p>It smelled and tasted heavenly and definitely reminded me of home.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39539 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/21-1.jpg\" alt=\"21\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/21-1.jpg 638w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/21-1-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>This type of rice bowl is usually made with fried pork, and in that case it&#8217;s called &#8220;katsu-don&#8221;: one of the most popular rice bowl dishes in Japan.<\/p>\n<p>I like pork but this time I decided to go with salmon.<\/p>\n<p>The key to good fried salmon is the same for the pork one; use Japanese-style bread crumb, &#8220;Panko&#8221;.<\/p>\n<p>It makes the salmon super crisp outside and moist inside when deep-fried.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39541 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/23-1.jpg\" alt=\"23\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/23-1.jpg 638w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/23-1-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>This fried salmon was served with eggs\/onions cooked with the wonderful dashi over brown rice.<\/p>\n<p>Delicious!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-39540 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/25-1.jpg\" alt=\"25\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/25-1.jpg 637w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/03\/25-1-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p><strong>Fried Salmon Rice Bowl<\/strong> for two bowls<\/p>\n<p>fried salmon<br \/>\n&#8211; 1\/2 lb salmon, cut in half<br \/>\n&#8211; salt and pepper<br \/>\n&#8211; flour<br \/>\n&#8211; 1 egg, beaten<br \/>\n&#8211; Panko bread crumb<br \/>\n&#8211; canola oil for frying<br \/>\n1\/2 onion, sliced<br \/>\nsauce<br \/>\n&#8211; 200ml dashi (Japanese stock)<br \/>\n&#8211; 3 tablespoons soy sauce<br \/>\n&#8211; 4 tablespoons mirin<br \/>\n&#8211; 2 teaspoons sugar<br \/>\n4 eggs, beaten<br \/>\n2 cups cooked brown rice<br \/>\ngreen onion, chopped<\/p>\n<p>1. Make fried salmon. Salt and pepper salmon. Coat it with flour, egg, and then with panko. Deep-fry the salmon in 350F oil until thoroughly cooked. Remove from the oil. Place it on a plate lined with paper towel.<br \/>\n2. Place sliced onion and the sauce ingredients in a pan and stir over medium heat. Cook onion in the sauce. Take some of the sauce and set it aside. Add eggs slowly. Cook over low-medium heat covered until the eggs are cooked to your prefered doneness.<br \/>\n3. Place the egg\/onion mixture over cooked brown rice. Place the fried salmon on top. Pour the sauce over the salmon.
