It&#8217;s eaten as a snack but it&#8217;s also used to make excellent flavorful vegan broth.<\/p>\n<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/01\/52.jpg\" rel=\"lightbox[38338]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-38348 aligncenter\" alt=\"52\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/01\/52.jpg\" width=\"358\" height=\"253\" \/><\/a><\/p>\n<p>This was served with lots of sauteed wood ear mushroom that has a great texture and makes a perfect topping.<\/p>\n<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/01\/38.jpg\" rel=\"lightbox[38338]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-38340 aligncenter\" alt=\"38\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/01\/38.jpg\" width=\"506\" height=\"717\" \/><\/a><\/p>\n<div id=\"recipe\"><strong>Vegan Shoyu Ramen<\/strong>soup<br \/>\n&#8211; canola oil<br \/>\n&#8211; 2 cloves garlic<br \/>\n&#8211; 1\/2 onion, sliced<br \/>\n&#8211; 2~3 tablespoons Shio-Kombu (Japanese salted kombu)<br \/>\n&#8211; 2 cups water<br \/>\n&#8211; soy sauce<br \/>\n&#8211; sugar<br \/>\n&#8211; salt and pepper<br \/>\ncooked ramen noodle (I use fresh noodle)<br \/>\nwood ear mushroom, sauteed<br \/>\ncorn<br \/>\ngreen onion<br \/>\nred ginger<\/p>\n<p>1. Make soup. Cook garlic and onion in oil. Add shio-kombu and continue to cook. Add water. Boil and then reduce to a low heat. Add soy sauce, sugar, salt, and pepper.<br \/>\n2. Serve cooked ramen noodle in the soup with mushroom, corn, onion, and ginger.<\/p>\n<\/div>\n<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/01\/37.jpg\"
