{"id":37527,"date":"2015-10-25T21:56:16","date_gmt":"2015-10-26T01:56:16","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=37527"},"modified":"2015-10-26T20:48:35","modified_gmt":"2015-10-27T00:48:35","slug":"miso-udon-noodle-soup%e3%83%94%e3%83%aa%e8%be%9b%e5%91%b3%e5%99%8c%e7%85%ae%e8%be%bc%e3%81%bf%e3%81%86%e3%81%a9%e3%82%93","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=37527&lang=en","title":{"rendered":"Miso Udon Noodle Soup<br>\u30d4\u30ea\u8f9b\u5473\u564c\u716e\u8fbc\u307f\u3046\u3069\u3093"},"content":{"rendered":"<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/671.jpg\" rel=\"lightbox[37527]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-37528 aligncenter\" alt=\"67\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/671.jpg\" width=\"506\" height=\"717\" \/><\/a><\/p>\n<p><strong>Miso Udon Noodle Soup<\/strong><\/p>\n<p>Miso udon noodle soup or &#8220;miso nikomi&#8221; is a popular noodle dish originated in the city called Nagoya in Japan I&#8217;m from.<\/p>\n<p><!--more--><\/p>\n<p>You&#8217;re supposed to use a particular kind of miso called &#8220;Haccho&#8221; but it&#8217;s hard to find it here in the U.S. (Mitsuwa usually does sell it at their stores and online shop).<\/p>\n<p>Haccho miso is a dark miso but it&#8217;s extra dark and gives an extra richness.<\/p>\n<p>Since I was out of Haccho miso, I decided to use regular dark miso but then added gochujang for an extra richness and a little spiciness.<\/p>\n<p>Any soup is welcomed this time of the year but this noodle soup is extra comforting to me.<\/p>\n<div id=\"recipe\"><strong>Miso Udon Noodle Soup<\/strong>soup<br \/>\n&#8211; 2 cups water<br \/>\n&#8211; 1 3&#215;3 inch kombu (dried Japanese seaweed)<br \/>\n&#8211; 3 tablespoons dark miso<br \/>\n&#8211; 1\/2 ~ 1 tablespoon cane sugar<br \/>\n&#8211; 1\/2 teaspoon gochujang<br \/>\n&#8211; salt<br \/>\n100g udon noodle, cooked<br \/>\n1 egg<br \/>\n1\/3 cup, scallion, cut into bite sized pieces<br \/>\n2 pieces <a title=\"a\" href=\"https:\/\/en.wikipedia.org\/wiki\/Aburaage\" target=\"_blank\">&#8220;abura-age&#8221;<\/a><br \/>\nJapanese shichimi pepper<\/p>\n<p>1. Make soup. Combine water and kombu in a pot. Boil and then turn down to low heat. Simmer for a few minutes.<br \/>\n2. Add the rest of the ingredients. Stir and make sure miso and gochujang are fully dissolved.<br \/>\n3. Add noodle to the soup and continue to cook for a few minutes. Add an egg, scallion, and abura-age.
