{"id":37490,"date":"2015-10-24T21:37:54","date_gmt":"2015-10-25T01:37:54","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=37490"},"modified":"2015-10-25T18:32:41","modified_gmt":"2015-10-25T22:32:41","slug":"mapo-tofu-with-enoki-mushroom%e3%81%88%e3%81%ae%e3%81%8d%e5%85%a5%e3%82%8a%e9%ba%bb%e5%a9%86%e8%b1%86%e8%85%90","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=37490&lang=en","title":{"rendered":"Mapo Tofu with Enoki Mushroom<br>\u3048\u306e\u304d\u5165\u308a\u9ebb\u5a46\u8c46\u8150"},"content":{"rendered":"<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/581.jpg\" rel=\"lightbox[37490]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-37491 aligncenter\" alt=\"58\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/581.jpg\" width=\"717\" height=\"506\" \/><\/a><\/p>\n<p><strong>Mapo Tofu with Enoki Mushroom<\/strong><\/p>\n<p>Since I found sweet bean sauce (tianmianjiang) and Sansho Japanese pepper, the two key ingredients of mapo tofu (in my opinion) at the local Asian grocery store the other day, I&#8217;ve been anxious to make it the past few weeks!<\/p>\n<p><!--more--><\/p>\n<p>This turned out delicious!<\/p>\n<p>I&#8217;ve been making mapo tofu without these two ingredients for many years, but I realized how big of a difference they make! <\/p>\n<p>Mapo tofu is a great dish as the soft tofu and spicy sauce go so well.<\/p>\n<p>But I always feel like adding one more (if not more) ingredient, just to make it a bit more interesting.<\/p>\n<p>This time I added enoki mushroom and this added a great flavor and texture.<\/p>\n<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/37.jpg\" rel=\"lightbox[37490]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-37493 aligncenter\" alt=\"37\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/37.jpg\" width=\"717\" height=\"506\" \/><\/a><\/p>\n<div id=\"recipe\">\n<strong>Mapo Tofu with Enoki Mushroom<\/strong><\/p>\n<p>canola oil<br \/>\n2 cloves garlic, chopped<br \/>\n1\/2 tablespoon chopped ginger<br \/>\n2 tablespoons chopped scallion<br \/>\n1.5 cup <a title=\"j\" href=\"http:\/\/www.maisen.co.jp\/en\/products\/just-like-meat\/just-like-meat-marukkiri-oniku.html\" target=\"_blank\">Just like Meat (ground version)<\/a>, cooked in boiled water for two minutes<br \/>\n1~2 teaspoons hot bean sauce or Doubanjiang\/Tobanjan<br \/>\nsauce<br \/>\n&#8211; 2 cups water<br \/>\n&#8211; 2 tablespoons soy sauce<br \/>\n&#8211; 1.5 tablespoon sugar<br \/>\n&#8211; 2 tablespoons sweet bean sauce (Tenmenjan)<br \/>\n1 package soft tofu, cut into bite size pieces<br \/>\ncorn starch + water (for thickening)<br \/>\nsalt<br \/>\nsesame oil<br \/>\nSansho Japanese spice<br \/>\n1 tablespoon chopped scallion<\/p>\n<p>1. Cook garlic, ginger, and scallion in oil for a few minutes.<br \/>\n2. Add Just like Meat and continue to cook.<br \/>\n3. Add hot pepper sauce and continue to cook for a few minutes.<br \/>\n4. Make sauce. Combine all the ingredients. Pour the sauce into the pan. Boil and then turn down to low heat.<br \/>\n5. Add tofu and continue to cook for a few minutes.<br \/>\n6. Turn heat up and then add the mixture of corn starch and water. Stir and continue to cook until the sauce thickens. Salt.<br \/>\n7. Serve with sesame oil, Sansho Japanese spice, and chopped scallion. <\/p><\/div>\n<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/10\/59.jpg\" rel=\"lightbox[37490]\"><img
