{"id":35850,"date":"2015-06-07T21:26:00","date_gmt":"2015-06-08T01:26:00","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=35850"},"modified":"2015-06-08T16:47:57","modified_gmt":"2015-06-08T20:47:57","slug":"koya-tofu-fried-chicken%e9%ab%98%e9%87%8e%e8%b1%86%e8%85%90%e3%81%ae%e3%83%95%e3%83%a9%e3%82%a4%e3%83%89%e3%83%81%e3%82%ad%e3%83%b3","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=35850&lang=en","title":{"rendered":"Koya Tofu Fried &#8220;Chicken&#8221;<br>\u9ad8\u91ce\u8c46\u8150\u306e\u30d5\u30e9\u30a4\u30c9\u30c1\u30ad\u30f3"},"content":{"rendered":"<p><a href=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/06\/641.jpg\" rel=\"lightbox[35850]\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-35851 aligncenter\" alt=\"641\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2015\/06\/641.jpg\" width=\"506\" height=\"717\" \/><\/a><\/p>\n<p><strong>Koya Tofu Fried &#8220;Chicken&#8221;<\/strong><\/p>\n<p>When I lived in Japan, I never really paid attention to many Japanese traditional food. <\/p>\n<p><!--more--><\/p>\n<p>You know, we tend to take things for granted until you lose them.<\/p>\n<p>Koya tofu was one of those foods.<\/p>\n<p>Koya tofu is basically freeze dried tofu, and once you soak it in hot water or soup for a few minutes, it&#8217;s ready to eat.<\/p>\n<p>I like it because this is packed with protein from soy beans, but another unique thing about it is its texture.<\/p>\n<p>It has a much more substantial texture compared to regular tofu and you can use it for dishes that regular tofu doesn&#8217;t work well for. <\/p>\n<p>This fried &#8220;chicken&#8221; was made with koya tofu. There is no meat.  <\/p>\n<p>The texture is quite similar to chicken breast. <\/p>\n<p>But the most important thing to me is that it tastes good. I actually prefer the taste of this to real chicken fried chicken!<\/p>\n<div id=\"recipe\"><strong>Koya Tofu Fried &#8220;Chicken&#8221;<\/strong><\/p>\n<p>70~80g koya tofu (dried)<br \/>\n2~3 cups hot water<br \/>\n1 bag <a href=\"https:\/\/www.culinarytribune.com\/?p=35765\" target=\"_blank\">vegetable dashi<\/a> or 1 cube of vegetable soup base<br \/>\n1 clove garlic, cut in half<br \/>\nsalt and pepper<br \/>\ncorn starch for dusting<br \/>\nsalt<\/p>\n<p>1. Place koya tofu in a mixture of hot water, vegetabe dashi (soup base), garlic, salt, and pepper. Make sure the liquid covers the koya tofu. Let the tofu soak the liquid for about 3~4 minutes. Remove from the liquid. Pat them with paper towel to take the liquid off the tofu.<br \/>\n2. Coat the tofu with corn starch.<br \/>\n3. Fry them in 350F oil for a few minutes until they become crispy outside.<br \/>\n4.
