You can still enjoy the flavor from the pork, but you get to eat lots of vegetables with it.<\/p>\n<p>All the green vegetables, particularly the tangy tomatillos, really keep this soup fresh and perfect for summer!<\/p>\n<p>This soup tastes even better the next day or two days later.<\/p>\n<div id=\"recipe\">\n<p><strong>Pork Zucchini Tomatillo Soup<\/strong><\/p>\n<p>canola oil<br \/>\n2 garlic cloves, chopped<br \/>\n1 onion, chopped<br \/>\n1 zucchini, cut into small pieces<br \/>\n1\/3 lbs pork, cut into small pieces<br \/>\nsalt and pepper<br \/>\nflour<br \/>\n2 tomatillos, cut into small pieces<br \/>\n1~2 cups water<br \/>\n1 vegetable soup cube<br \/>\n1\/2 teaspoon cumin<br \/>\n1\/4 teaspoon dried oregano<br \/>\n2 bay leaves<br \/>\n1\/2 tablespoon sugar<br \/>\nsalt and pepper<br \/>\ncilantro, chopped<\/p>\n<p>1. Cook garlic and onion in canola oil.<br \/>\n2. Add zucchini and continue to cook for a few minutes. Take them out of the pot.<br \/>\n3. Salt and pepper pork. Coat pork pieces with flour.<br \/>\n4. Add oil to the pot. Brown pork.<br \/>\n5. Put the vegetables back into the pot. Add tomatillos.<br \/>\n6. Add water (to cover the pork and vegetables) and soup cube. Boil and then turn to low heat.<br \/>\n7. Add cumin, oregano, bay leaves, sugar, salt, and pepper.<br \/>\n8.
