<\/a><\/p>\nPineapple Coconut Muffins<\/strong><\/p>\n Obviously I failed. The muffins collapsed during the baking process…<\/p>\n I thought about not posting this (and I didn’t post this for over a month; these were made on March 15), but I finally decided to let this make an appearance because 1) they tasted good and 2) this may be a perfect opportunity to talk about one of my favorite Seinfeld episodes, “The Muffin Tops”.<\/p>\n So, these muffins collapsed. Apparently something was off and the structure was not there to hold up the top. Although I didn’t get the pretty domed top, I instead ended up with a flat and crunchy top. And the crunchy top turned out to be wonderful!<\/p>\n I started eating just the tops and that reminded me of the Seinfeld’s episode, “The Muffin Tops”, where Elaine gets a “million-dollar idea”: to open a store that sells just the muffin tops. Although I found the episode interesting, I never really related to it until I had these crunchy muffin tops. Now I do agree that the top IS really the best part of the muffin!!<\/p>\n I did write down the recipe I created, but since they collapsed I threw it away impulsively. I now wish I had kept the recipe because I might want to re-create the same collapsed muffins with the crunchy top!!
