I do enjoy eating out (and I try to make healthy choices at restaurants), but after a while I miss my home cooked meals. This zo-sui or Japanese risotto was a perfect way to re-focus on my diet and life style. The biggest difference between zo-sui and risotto is that you add cooked rice (or quinoa in this case) to some sort of soup or stock, instead of cooking rice in the stock from the very beginning. Because of this cooking method zosui tends to end up as a much lighter meal. By making my stock using kombu (dried seaweed), I was able to keep this dish 100% plant based.
