The fish section in the grocery store is so tiny (especially compared to the meat section next to it). The size really shocked me the first time I saw it because I was so used to a much larger selection of fresh fish in Japan. But since I&#8217;ve been here for almost 15 years, I&#8217;ve got used to it. I have even found a few favorite fish here, and cod is one of them. Last weekend I saw this beautiful cod at the store and I decided to make Japanese style risotto with it. The soup was made with Japanese fish soup base and ginger.
