<\/a><\/p>\nLemon Salad Pizza<\/strong><\/p>\n When we first saw it on the menu at the restaurant<\/a> a few weekends ago, we were not so sure what to expect. Lemon, salad, and cheese on pizza sounded almost too simple. But we were glad we followed our server’s recommendation and ordered it. Their lemon salad pizza was absolutely delicious. <\/p>\n Using that as an inspiration I created this, my version of lemon salad pizza at home last weekend. We used a little different types of cheese (two types of local sheep milk cheese: Gorgonzola type and Parmesan-like one) we found at the nearby farmers market the morning. I baked the crust without any toppings first, and then I added cheese and cooked it until the cheese melted and the crust turned slightly brown on the edge. Then I served it with lots of salad leaves dressed with lemon dressing. Sprinkle some chopped capers and squeeze fresh lemon juice. It’s a simple but very tasty pizza. Because of this simplicity, the quality of each ingredient is important. I would recommend using good quality cheese, homemade crust (if you can), and freshly made lemon dressing. <\/p>\n For this pizza I made corn meal crust that I wanted to try for a while since I had seen it on TV a few weeks ago. I sprinkled a generous amount of corn meal on the both sides of my crust before rolling it out to give the interesting crunchy texture. I used this recipe<\/a> as a base for this crust.
