I liked the look and I enjoyed making sandwiches with them so much that I decided to make some more today. Since Terry was not home much this week and he was not using spinach for his smoothie, I decided to use some from two big bags of fresh spinach. The ingredients and measurements are mostly based on the Boule recipe in “Artisan Bread in Five Minutes a Day”, of course except for an addition of pureed spinach. I baked my pita bread at 500F for 7 minutes.

Spinach Pita Bread When I was making flatbread the other day, some of the smaller sized ones looked rather like pita bread.
