<\/a><\/p>\nSummer Harvest Salad on Rice<\/strong><\/p>\n Today I was working from home. I was able to get everything done by noon and I thought about eating out for lunch. Then I looked inside my fridge and I couldn’t think of a better lunch than a homemade fresh salad. The corn I had bought from the local grocery store taste so fresh and sweet that I didn’t want to cook it.So the corn was perfect for the salad. Fresh corn, avocado, grape tomatoes, radish slices, cilantro, and arugula were placed on top of white rice. Since the salad tastes so fresh, I didn’t want to add any strong tasting dressing. I simply sprinkled salt, \u00a0lime juice, white vinegar, and soy sauce (What can I say.
