I couldn&#8217;t come up with any other good name. So here it is&#8230; breakfast cake. I named this breakfast cake because I made this specifically for breakfast and it&#8217;s packed with lots of good stuff like flaxseed, oats, and nuts. There are no eggs or milk and it&#8217;s 100% plant-based. It&#8217;s really perfect to eat in the morning with a cup of strong coffee. It&#8217;s also wonderfully crunchy. Just the way I like it! I created this cake without a specific recipe, and I was actually surprised that this came out of the oven looking like a cake. And it was edible(lol)!<\/p>\n<p>Breakfast Cake:<\/p>\n<p>*I&#8217;m pretty sure of what I put in, but I&#8217;m not super confident with the measurements of these ingredients: almond meal, all purpose flour, ground flaxseed, sliced almond, and oats. I was like adding a little bit of this and a little bit of that and then hmmmm, let&#8217;s add a little bit of this again&#8230; So I apologize in advance for this not so reliable measurements. I&#8217;m still keeping this recipe here because I do want to make this again and this will help me at least start.<\/p>\n<p>1 cup almond meal<br \/>\n1\/2 cup all purpose flour<br \/>\n1\/2 cup ground flaxseed<br \/>\n1 cup old fashioned oats<br \/>\n1 teaspoon baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n1 cup unsweetened applesauce<br \/>\n1 cup soy milk (NOTE: I used 1 cup this time but I will reduce it to probably about 2\/3 cup next time)<br \/>\n1\/4 cup vegetable oil<br \/>\n1\/4 cup honey<br \/>\n1\/4 cup cane sugar<br \/>\n1 cup cherries pitted and halved<br \/>\n1\/2 cup sliced almond<\/p>\n<p>1. Preheat the oven to 350 degrees.<br \/>\n2. Combine all the ingredients. Stir until well combined.<br \/>\n3. Pour the batter to the pan lined with parchment paper.<br \/>\n4. Bake for about 50-60 minutes or until a toothpick inserted in the middle of a cake comes out clean.
