It&#8217;s called Quang. They make fantastic pho and their spring rolls are the best! I&#8217;ve tried so many different Vietnamese restaurants in the Twin Cities and in other states, but then I&#8217;ve been disappointed so many times. I get excited whenever I find a Vietnamese restaurant that has many great reviews, and after one bite, I&#8217;m like &#8220;It&#8217;s good, but not as good as Quang!&#8221; Then a few weeks ago we tried a new Vietnamese restaurant which is only 10 minutes from our house. It has good reviews but I was skeptical as I have been recently about any new Vietnamese restaurants. The restuarant is called Kim Anh Pastery and Deli, and I ordered rice noodle salad with shrimp and pork. It was absolutely delicious. I can&#8217;t say it&#8217;s better than Quang because I haven&#8217;t had this type of noodle salad at Quang for a long time. But I&#8217;ll definitely go back to this new place and it&#8217;s so close!<\/p>\n<p>Since I liked their noodle salad very much, I wanted to create something similar to this for dinner tonight. My version is almost vegan. I say &#8220;almost&#8221; because there is no meat or fish in my version, but I used oyster sauce to flavor TVP and fish sauce for dressing. But I don&#8217;t feel bad about this not completely vegan because this salad tastes so fresh and flavorful, which is more important than having a 100% vegan dish to me.
