I didn&#8217;t want to waste them, so I decided to make muffins. This time I added barley tea to these muffins, and I loved the result. You can&#8217;t really pinpoint the flavor (especially if you&#8217;re not familiar with barley tea) but you will definitely enjoy its distinct roasted flavor. I froze most of them before leaving for our trip. They freeze and thaw well. <\/p>\n<p>Banana Barley Tea Muffins (modified from Michael&#8217;s Banana Coffee Muffins by Paula Deen)<br \/>\n(makes about 10 muffins) <\/p>\n<p>1\/6 cup melted butter<br \/>\n2 ripe bananas, smashed<br \/>\n1.5\/4 cup sugar<br \/>\n1\/2 egg, beaten<br \/>\n1\/2 teaspoon vanilla extract<br \/>\n3 tablespoons strong barley tea<br \/>\n1\/2 teaspoon baking soda<br \/>\nPinch salt<br \/>\n3\/4 cups all-purpose flour<br \/>\n2\/3 cup chopped walnuts<\/p>\n<p>Preheat oven to 350 degrees F.<br \/>\nWith a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, barley tea and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix until it is just incorporated. Fold in the chopped walnuts. Pour mixture into a prepared muffin tin. Bake for 20 to 30 minutes.
