Christmas Lemon Cornmeal Cookies<\/strong>

It’s definitely getting cold here in Minnesota. But it has snowed only a few times this winter and there have not been too many days with freezing temperature like last year. I know some people are worried that we may not have a white Christmas this year, but I will be okay with non-white Christmas for a change. Snow would be pretty as a background for my beautiful Christmas trees, but I wouldn’t be exactly thrilled about the idea of shoveling snow on the Christmas morning…<\/p>\n

Anyway, these are lemon cornmeal cookies I made last weekend. The cornmeal texture is quite interesting. I was planning to decorate them with lemon icing, but I still haven’t gotten to it; and there aren’t many left…<\/p>\n

I used\u00a0this recipe<\/a>; I omitted raisins and added lemon zest.<\/p>\n
