<\/a><\/p>\nGinger Chicken Sandwich<\/strong> Last weekend Terry and I visited the new shopping development that had just recently been completed. After browsing some stores, we decided to have lunch at one of the new restaurants there. There were several interesting restaurants but We picked “Cooper” because we liked their pretty outdoor seating and their menu looked interesting. I ordered breakfast burger and Terry had ginger chicken sandwich. We both loved our food. But as soon as I saw their menu, I knew I wanted to re-create the ginger chicken sandwich at home as we both love ginger.<\/p>\n Here is my version of ginger chicken sandwich I made for dinner last night. You’ll find in this sandwich, lettuce, tomato, red onion, sauteed juicy chicken breast coated with ginger sauce, and grilled pineapple. I served it with chili mayo just like the restaurant did.
