I recently found in an old magazine an interesting page that listed various ideas of using peaches. One of the ideas I thought were cool was adding peach to corn salad. I had a few ripe nectarines that needed to be eaten soon, and I decided to make nectarine and corn salad. This is a perfect summer day side salad that goes well particularly with a fish dish, such as grilled salmon. The unexpected combination of corn and fruit is fun.
