Buffalo Chicken Tender and Grapefruit Salad<\/strong>

Last Saturday evening we went to the annual holiday party that Terry’s company hosted. We first met at a bar downtown Minneapolis and then we moved to Target Center to watch the Timberwolves basketball game. I’m not a big fan of basketball but I was very excited about this event because we got to watch the game from a suite! I had never had an experience like this, watching a sporting event from a suite, and I had a great time! In our suite there were lots of great food and drink available in a buffet style including a meat carving station. The Timberwolves lost unfortunately but I enjoyed watching the game in such a great setting. We were sent home with a lot of leftover food, and yesterday I made this salad using the buffalo chicken tenders that was one of the food we brought home Saturday night. Eating with vegetables and fruit is my way to feel a bit less guilty about eating lots of fried food (lol). Small pieces of Buffalo chicken tenders were combined with grapefruit, arugula, and sliced radish. I splashed some red wine vinegar, and sprinkled a little salt and pepper, and it was perfect. You could of course pour blue cheese dressing instead, but that might be a bit too predictable (lol).<\/p>\n
