Thai Curry Noodle Soup with Beef<\/strong>

People who know I like cooking sometimes think that I don’t go to fast food restaurants. I don’t go too often, but I do give into the temptation for the quick and tasty food once in a while. One ofour favorite fast food places is Noodles & Company (can I call them a fast-food restaurant???). I get craving for their Thai curry soup about once a month or so. Last weekend I had this craving, but then I didn’t want to go out; I simply wanted to spend a quiet evening at the end of the long weekend. <\/p>\n

Voila! Here is MY version of Thai curry soup. I used both Thai red curry paste and Indian yellow curry paste, so this is not strictly Thai, but it still tasted exotic enough for me (lol). I made my soup a bit thicker than the restaurant’s. <\/p>\n

Thai Curry Noodle Soup with Beef:
\n1. Sautee sliced beef, onion, green beans, green pepper, and celery with salad oil. Take them out of pan. Set aside.
\n2. Combine garlic, ginger, onion, celery, cabbage, green pepper, water in the pan used for 1 and boil. Reduce to a simmer.
\n3. When vegetables are tender, puree using the immersion blender.
\n4. Add chicken base, beef base, Thai red curry paste, Indian yellow curry paste, brown sugar, fish sauce, soy sauce. Salt and pepper. Continue to cook at low heat.
\n5. Add corn starch\/water mixture to thicken the soup.
\n6. Serve with cooked noodle (rice noodle is recommended\/ I used soba noodle), sauteed vegetables and beef (1), and fresh cilantro. <\/p>\n
