I’m always interested in learning food in different countries. A good friend of mine, Line, is from Norway and when she told me about this sweet treat she grew up with back in Norway, I became very interested. Line was able to find an authentic recipe (written in Norwegian) and she translated it into English for me. Last weekend we got together and tried to make this bread, called “Skolebr\u00f8d”. We assumed it would be quick and easy to make, as the process seemed pretty simple and the recipe only required a short time for letting the dough rise. However, we ran into a few unexpected obstacles(!) early in the process. First we had to convert deciliters to US cups, and we also needed to figure out how much dry yeast we should use to replace fresh yeast… It took us a while to figure these out and we were not 100% sure of the decisions we made. But I guess we did good because the final result was absolutely wonderful!! The cardamom flavor in the bread was unique to me (apparently cardamom is very popular in Scandinavian baking) and very tasty! I also loved the coconut icing.<\/p>\n

We used this recipe (written in Norwegian)<\/a>, but we made vanilla cream from scratch instead of using store-bought pudding.<\/p>\n
