Bacon Zucchini Pancakes<\/strong>

A friend in UK told me about the Norwegian bacon pancake; apparently people in Norway make pancakes with fried bacon inside. I thought it was very interesting, and I have since wanted to try. Yesterday I decided to do this, but I also added shredded zucchini. I had lots of zucchini I needed to use, but I also liked the idea of putting something green in my pancakes. It’s silly but it’s kind of nice to know that there is at least some vegetable on my plate (lol). I served these pancakes with butter and maple syrup. I know some people will find this (bacon and zucchini in pancakes) weird, but it’s fun to experiment in the kitchen and make something new and different. The texture of zucchini is a nice touch, and I always like the combination of sweet and salty (maple syrup and bacon in this case).<\/p>\n
