It was light, healthy, and absolutely delicious. If you can get fresh fish, I think this is one of the best ways to enjoy it. On a piece of aluminum foil, place cooked rice, sliced onion, green peppers, sliced tomatoes, and a fillet of cod. On top of that, add a bay leaf, a lemon slice, capers, and sprinkle a little white wine. Salt and pepper. Close the foil and bake it in the oven at 400F for about 30 minutes. When it’s done, the cod is supposed to be flaky but super moist inside. I sprinkled chopped parsley and drizzled yuzu mustard sauce (made with yuzu mustard, soy sauce, and olive oil) right before serving. I can’t wait to try another version of this “fish baked in foil”. You can basically use any types of fish, vegetables, and sauces. The possibility is endless. It only takes a few minutes to prepare (before baking), so this can be a perfect weeknight dinner, too.

タラとご飯のホイル焼き<br
