タラゴンというハーブを購入したので、コレを使ってローストビーフにあわせるソースを作ってみた。

タラゴンは大抵はチキン、魚、卵などにあわせられることが多いハーブ。

今回は牛肉にあわせるということもあって、ホースラディッシュ（おろしたもの、瓶入りで売っている）と組み合わせてみた。

牛肉はプライムリブ用のスパイスをたっぷりつけたら、両面をフライパンで焼いて出来上がり。

大切なことはフライパンから出した後、アルミフォイルに包んで５分ほど寝かせること。

これをやらずに、フライパンから出してすぐに切ると、中の美味しい肉汁がすべて出てきてしまうから。

今回は、私好み、ばっちりミディアムレアに焼きあがって満足。
　
（オーブンで焼いていないので、細かく言うと、ローストビーフと言うよりはステーキなのですが、あらかじめスライスして皿にのせたこと、冷めても美味しい料理ということでローストビーフと呼んでみました。）

タラゴンホースラディッシュソース：マヨネーズ、サワークリーム、ウォーセスターシャーソース、ビーフベースを湯で溶いたもの、ホースラディッシュ（瓶入りのもの）、刻んだタラゴン、砂糖、塩、こしょう

卵ごはん、時々ムショウに食べたくなるものの一つ。

で、先日夕食にまた作ってしまった。

たまたま使ってしまいたかったひき肉があったので、これで、甘辛い肉味噌を作って卵ご飯にのせたもの。

美味しゅうございました。。。

I like big chunks of meat in my stew or curry, but Terry prefers thinly sliced meat. The thin sliced meats sold at stores are not thin enough for Terry, so I usually buy a large piece of meat, freeze it, take it out of the freezer before it’s completely frozen, and slice them thin with a knife. It usually works pretty well. The naan is from Trader Joe’s. The package of four pieces of naan is quite inexpensive. They were very good. I’ll definitely buy these again.

シチューとかカレーには大きく切った肉を入れるのが好きなのは私。

私とは正反対に、夫は、薄切り、っていうか、細切れみたいな肉を好む。。。

アメリカには、安くって美味しい塊肉がたくさん売っているというのに、先日もそういう肉を買ってきては、家で薄く薄くぺらぺらになるように包丁で切っった。

で、作ったのは、このカレー。

トマトがたっぷり入るので、色的にはビーフシチューみたいにも見えるけれど、味はしっかりカレー。

こちらで売っている市販のインドカレーペーストを入れて、さらに、カレー粉、クミン、ターメリック、ガムラマサラなどで、味付け。

野菜もたっぷり。

昔からカレーを食べるたびに、玉ねぎとニンジンはたっぷりだけど、ジャガイモは避けていた私。

最近は、ジャガイモは入れないことにしている。

大人っていいよね、自分の好きなものだけで料理出来るもんね（笑）。

付け合せにしたナンはjunebugさんに教えてもらった、Trader Joe’s（トレーダージョーズ）というスーパーで売っている冷凍のガーリックナン。

安くって美味しくって、大満足。

本当は自分で、ナン、作ろうと思ったけど、これなら買ったほうが楽チンだわ。

The combination of the sweetness from roasted butternut squash and the saltiness from prosciutto is wonderful. I pan fried prosciutto and added it to the risotto right before serving.

ローストスクオッシュと生ハムのリゾット

バターナッツスクオッシュという野菜、いわゆるかぼちゃの一種のようなもの。

火を通すと甘くなって、美味しいので、今回もオーブンでロースト。

あとはチキンベースで作ったリゾットにこのローストしたスクオッシュ（写真で濃いオレンジ色の大きめなもの、小さめなのはにんじん）とフライパンでカリッと炒めた生ハムを仕上げに入れて出来上がり。

スクオッシュの甘みと生ハムの塩気が良い。

ローストスクオッシュと生ハムのリゾット：バターナッツスクオッシュ（ローストしたもの）、玉ねぎ、セロリ、にんじん、米、チキンベース、水、ローリエ、生ハム（炒めたもの）、パルメジャンチーズ、塩、こしょう、パセリ

今夜はオスカー（アカデミー賞）授賞式。

テリーと私も、夕食後、ゆっくりとテレビで見るつもり。

うちは映画はＤＶＤが出るのを待つ派なので、今回ノミネートされている映画も見てないものがたくさん。

今夜の授賞式を参考にして、これから借りたいＤＶＤリストを二人で作る予定。

女優さん達のドレス姿も楽しみ。

When I saw Sunny Anderson cooking on Foodnetwork a few weeks ago, I really liked her idea of wrapping cubed steak with prosciutto. I tried this today for our Valentine’s day lunch. I changed a few things. I cooked prosciutto wrapped steak cubes with a little olive oil instead of butter, and I didn’t use her recipe for sauce. I made my own mustard sauce. The meat was very tender and moist. Terry and I loved this dish. I’ll definitely make this again.

Mustard Sauce: mayonnaise, Dijon mustard(regular and grain), horseradish(jar), Worcestershire sauce, steak sauce, mixture of beef base with water, sugar, salt, pepper

バレンタインズデーランチ:生ハム包みころころステーキとマスタードソース

ハッピーバレンタインズデー！！

先日テレビ（Ｆｏｏｄ　Ｎｅｔｗｏｒｋ）で生ハムをころころステーキに包んで焼いているのを見て、早速試してみたくなって。

今日の昼食にバレンタインズデーランチとして作ってみた。

ソースはマスタードソースなんだけれど、こちらはレシピは使わずに、私の創作ソース。

生ハムは生で食べるのが苦手なテリー。

焼いてぱりっとなった生ハムはとっても気に入ってくれて。

中身の牛肉も生ハムで旨みが逃げないようになるのか、柔らかくジューシーに出来上がった。

マスタードソースをたっぷりかけたら、パセリとピンク色のペッパーコーンを飾って出来上がり。

濃いピンク色のペッパーコーンでちょっとバレンタインズデーらしくなった、かな？

マスタードソース：マヨネーズ、ディジョンマスタード（スムーズなものと粒のもの二種）、ウオーセスターシャーソース、ステーキソース、湯に濃くビーフベースを溶いたもの、ホースラディッシュ（瓶入り）、砂糖、塩、こしょう

ランチを食べた後は、バレンタインズプレゼント交換。

カード以外にはプレゼント交換なんて予定してなかったんだけれど、金曜日の夜出張先から戻った夫、明らかにプレゼントと分かる紙袋を抱えて帰ってきたものだから、私もあわてて（手作りものを）用意した次第（苦笑）。

バレンタインズデー、私はいつも準備不足で夫に驚かされる、という感じだなあ。

嬉しいサプライズであります、夫に感謝。

Medium-firm tofu was cut into small cubes, coated with corn starch, and deep-fried. I like to deep-fry tofu, because it makes the outside nice and crunchy, and keep the inside still soft. It also gives an additional flavor and I think it makes it easier for my husband to eat. Ground beef was cooked with garlic, ginger, and several other Japanese and Chinese ingredients, including soy sauce, sugar, miso, tobanjan (Chinese bean paste), and crushed red pepper. Corn starch was added at the end. Add cooked tofu to the beef mixture, and serve it over rice.

揚げ豆腐とピーマンで麻婆豆腐

麻婆豆腐、なぜか出来がりがいつも“肉味噌”みたい（苦笑）。

水分が足りないのよね、きっと。

あの麻婆豆腐独特のとろ～り、というのがあまりできないのが残念。

これが今後の課題だわ。。。

こちらの普通のスーパーで売っている豆腐は全体的に硬めで、味もやっぱり日本のものに比べるとイマイチ。

ということもあって、この豆腐はコーンスターチを軽くつけて、揚げてやるのが私流の食べ方。

ちょっと味が引き立つような気がする（のは私だけかな？）。

油で揚げることで、ひと味ついて、これがそのままの豆腐より夫にとっても食べやすいようである。

（ちなみにいわゆる日本の絹ごし豆腐のようなあれほど柔らかい豆腐はうちの近くの普通のスーパーでは手に入らない。。。）

最近は頑張ってもっと野菜を食べようという気持ちもあって、これにもあらかじめさっと素揚げしたピーマンを投入。

ご飯にたっぷりかけて食べた。

こういうの、夫も私も大好き。

ご飯がもりもりすすみ過ぎる、っていうのはちょっとコワいけど（笑）。
