This Renkon lotus tacos rock!
Renkon does not have a very strong flavor, but it soaks up whatever the flavor you want to add.
One of the reasons I like Renkon is its texture.
It keeps a unique texture that does not get mushy when cooked.
Perfect when served with freshly made pico de gallo.
By the way, I just visited a recently opened Asian grocery store near our house.

Renkon Lotus Tacos
Renkon filling
-canola oil
-2 cloves garlic, chopped
-2 cups bite size pieces Renkon lotus, dusted with corn starch
-salt and pepper
-2 cup water
-1~2 tablespoons cane sugar
-1~2 tablespoons soy sauce
-cumin
-chili powder
-paprika
-1/2 cup fried onion
pico de gallo (chopped tomatoes, onion, cilantro, jalapeno peppers (from jar), lime juice, salt)
corn tortillas
chopped cilantro
lime wedges
hot sauce
1. Make Renkon lotus filling. Sautee garlic and renkon in oil. Salt and pepper. Add water, sugar, soy sauce, and spices. Continue to cook until the sauce thickens. Add fried onion. Stir.
2. Serve Renkon lotus filling on tortillas with pico de gallo, chopped cilantro, splash of fresh lime juice, and hot sauce.
