I love peas and I always keep a bag of frozen peas in my freezer.
When I saw fresh peas at the farmers market last weekend for the first time this year, I had to buy them.
Look at these beautiful peas!
I decided to use this beautiful green spinach pasta (also from the market) to make lunch with the peas.
Mise en place!
I decided that the main ingredients were peas and fresh herbs (dill and taragon), but I wanted to add some non-green color, too.
The yellow squash I got from the market was just perfect for that.
Fresh Pea and Herb Pasta
olive oil
2 cloves garlic, chopped
1 small yellow squash, diced
1 cup fresh peas, blanched
200g pasta, freshly cooked
1/2 to 1 tablespoon Dill mustard
salt and pepper
freshly squeezed lemon juice
2 tablespoons chopped herbs (I used dill and taragon)
1. Sautee garlic in oil.
2. Add yellow squash and peas and continue to cook for a few minutes.
3. Add cooked pasta.
4. Add mustard, salt, and pepper.
5. Serve with fresh lemon juice and fresh herbs.
