Vegan Shoyu Ramen
There are different flavored ramens.
The major ones are salt, shoyu, miso, and tonkotsu, but shoyu (or soy sauce flavored soup) tends to be many ramen noodle shops’ original or basic ramen.
I like all the flavors, but sometimes I just want to go back to the basics, like any food.
So, I made this shoyu ramen for lunch yesterday, and it turned out to be delicious and very satisfying.
I’m a big fan of kombu (Japanese dried seaweed), but this salted kombu called “shio-kombu” is probably one of my favorites. It’s eaten as a snack but it’s also used to make excellent flavorful vegan broth.
This was served with lots of sauteed wood ear mushroom that has a great texture and makes a perfect topping.
– canola oil
– 2 cloves garlic
– 1/2 onion, sliced
– 2~3 tablespoons Shio-Kombu (Japanese salted kombu)
– 2 cups water
– soy sauce
– sugar
– salt and pepper
cooked ramen noodle (I use fresh noodle)
wood ear mushroom, sauteed
corn
green onion
red ginger
1. Make soup. Cook garlic and onion in oil. Add shio-kombu and continue to cook. Add water. Boil and then reduce to a low heat. Add soy sauce, sugar, salt, and pepper.
2. Serve cooked ramen noodle in the soup with mushroom, corn, onion, and ginger.
醤油ラーメン
昔からラーメン大好き子供でしたが、
最近ラーメン食べたい、と思うことがまた増えてきました(笑)。
これは週末に作ったラーメン。
ヴィーガンですが、塩こんぶでしっかり出汁をとったスープは美味ですよ~。
先日Wood Ear(ウッド・イヤー)という乾燥キノコを買ったのですが、戻したら、あら、これ、きくらげだわ、と(苦笑)。
恥ずかしい話、きくらげ、ってずっとくらげの一種だと思っていました。。。
ので、もちろん海に生息するものだと。。。
きくらげって、きのこだったんですね。
さっそく戻したものをさっと炒めてラーメンにたっぷりいれました。
ラーメンにきくらげ、大好きな組み合わせです!
今週来週にかけて、フィギュアスケートの国内選手権が行われています。
せっかく歩いていけるところでやっているので、チケットを買って行って来ました。
今日は一日目ということで、全て、Novice(ノービス)、つまり初心者グループ。
男子シングル、女子シングル、そして、ペア。
みんな見た目13~16歳ぐらいかな?
頑張る姿が素敵でした。
初心者グループということで、今日は席がらがら。
そのためすっごい間近で見ることができたのも楽しかったです。
