Autumn Salad
When I went to the local Asian grocery store to buy wonton wrappers for our last weekend’s pot sticker dinner party, I saw beautiful Asian pears and persimmons.
Persimmon was never my favorite when I lived in Japan, but now I like to eat it at least once a season; I’m liking it more and more every year!
There is an old Japanese saying that fall is the best season to read, exercise and enjoy food, and I couldn’t agree more!
Japanese admire many seasonal foods, and pears (Asian), persimmons, and grapes are a few of the most popular fall foods, along with chestnut, Matsutake mushroom, and mackerel pike (“Sanma”).
1/4 Asian pear, peeled and sliced
1/2 Fuyu persimmon, peeled and sliced
1/2 cup grapes, cut in half
1~2 cups Shungiku leaves
1/2 cup spinach
1/2 tablespoon chopped walnuts
balsamic dressing
– 1 tablespoon balsamic vinegar
– 1 tablespoon maple syrup
– 1/2 tablespoon canola oil
– 1 teaspoon Dijon mustard
– salt and pepper
1. Place all the vegetables and fruits on a plate.
2. Make dressing. Combine all the ingredients and mix well with a hand blender.
3. Serve the salad with the dressing.
