Ramen
When things are stressful ramen helps me get through them.
I recently went through a tough week and I don’t know how I could have survived it without this ramen (and my super supportive hubby).
Since it’s hard to find good vegan ramen (well it’s hard to find good ramen in the Midwest to begin with), if I want to eat ramen, I usually end up making one at home.
This is a meatless ramen, and it can be vegan if you don’t add an egg.
The key ingredients I like to use for my vegan ramen soup are Kombu (Japanese dried seaweed) and garlic.
Soy milk is also a great addition to give a depth to the flavor.
soup
– 1 cup water
– 1 3×3 inch kombu (Japanese dried seaweed)
– 2 cloves garlic
– 1 cup soy milk
– 1/2~ 1.5 tablespoons soy sauce
– 1/2 ~ 1 tablespoon sugar
– salt and pepper
100g ramen noodle, cooked
1 tablespoon chopped scallion
sesame oil
1 tablespoon red ginger (beni-shoga)
sesame seeds
1 boiled egg (optional)
1 tablespoon shio-kombu (Japanese salted seaweed: optional)
1. Make soup. Combine water, kombu, and garlic in a pot. Boil and then turn down to low heat. Continue to simmer until garlic is cooked through.
2. Add soy milk, soy sauce, sugar, salt, and pepper. Remove the kombu. Puree the garlic with a hand blender.
3. Serve ramen noodle in the soup, with scallion, red ginger, sesame seeds, and a few drops of sesame oil.
にんにく豆乳ラーメン
気が向くとこんなヴィーガンラーメンを作ってます。
今回は最後に玉子を入れたので、ヴィーガンではありませんが、
それ以外は植物性。
スープが白いのは豆乳入りだから。
豆乳とにんにくと昆布、かなり濃厚な味のスープが出来上がりますよ。
今日金曜日は、ちょっと時間があったので、午後は沢山料理ができる、と楽しみにしていたのですが、
朝から雨で、がっくり。
どうして料理するのに雨が問題なのかというと、料理したら出来たものの写真を撮りたく、雨だと暗すぎてきれいに写真が撮れないのです。
こんなことで、料理をする気が失せる、っていうのはダメですね。。。
明日もどうも時々雨な予報。
