Kabocha Pumpkin BBQ Pizza
Kabocha is so versatile and you can basically make any dish with this cute little pumpkin!
These sliced and roasted Kabocha tastes great on this pizza as well, as this goes so well with the rest of the ingredients, cashew paste, BBQ sauce, scallion, and maple coconut bacon.
Again, this is a great dish to show how flavorful meatless food can be!
1 dough for pizza crust
cashew paste
– 1 cup cashew nuts, soaked in water for 1 ~ 2 hours
– juice from 1/2 lemon
– 1.5~2 tablespoons Dijon mustard
– 1.5~2 tablespoons white vinegar
– sugar
– salt
1/4 Kabocha, sliced and sauteed in a pan
BBQ sauce
2 tablespoons chopped scallion
1/3 cup coconut bacon
salt and pepper
1. Roll out the pizza dough. Bake on a preheated pizza stone at 450F for about 4~5 minutes.
2. Make cashew paste. Combine all the ingredients. Puree nuts with a hand blender until smooth.
3. Spread the cashew paste on the pizza crust. Place the sauteed Kabocha slices and BBQ sauce. Put it back in the oven and bake for another 8~10 minutes or so.
4. Sprinkle scallion and coconut bacon. Salt and pepper.

またまたかぼちゃです~!
という始まりもちょっと飽きてきたかな(苦笑)。
カシューナッツで作ったペーストを塗ったら、さっと焼いたかぼちゃ、バーベキューソースをのせて、オーブンで焼きます。
かりっと焼きあがったら、小ネギとココナッツベーコンを載せて出来上がり。
やっぱり美味しい~!
こんなに(コレとかコレとかコレとかコレとかコレ)料理作ってるので、かぼちゃ大使にでもそろそろ任命されてもいい頃ではないかと思います(笑)。
もう一週間前になってしまいましたが、先週末のお散歩中の、3つ目の休憩地はこちらでした、という報告です。
以前ジョギング中に見かけて気になっていたお店なのです。
古い電車を改造したみたいな内装。
シカゴ料理が主、とういうことで、基本的には、ピザ、ホットドッグ、イタリアンサンドイッチ(薄切り牛肉を挟んだもの)なのですが、どちらかというとファストフードみたいなクオリティ。
で、ハンバーガー、フライドポテト、なんかももちろんアリます。
私たちは、イタリアンサンドイッチをオーダー。
緑のパプリカをローストしたものをトッピングとしてのせてもらいました。
実はこういう肉・チーズたっぷり、ファストフード系の食事は最近避けている私ですが、お腹すき過ぎ、しかも辺りには、野菜が食べられるような店がナイ、となると、こうなります。。。
嬉しかったのは、緑のパプリカが超肉厚で、しかもたっぷりのせてくれたので、私はほとんどコレばかり食べてました。。。
でも、人気のお店みたいで、沢山の人がランチに来てましたね~。

The pizza looks great! Been meaning to ask you, does the “coconut bacon” have a strong coconut flavor too, or do the other flavors over-ride the coconut flavor? Thanks!

Lori,
Coconut “bacon” doesn’t taste coconut much. Terry is not a big fan of coconut, but he likes to eat this. I think the taste and texture are both surprisingly quite similar to real bacon’s.
