Kabocha Nitsuke (Japanese Stewed Kabocha Pumpkin)
This is definitely a comfort food for me.
I grew up eating this dish several times during the squash season (fall) every year.
To tell you the truth, this was never my favorite Kabocha dish, but it’s one of the most traditional and best known Kabocha dish in Japan.
I did some research and looked at many recipes, but the one I used as a base to make my own uses an interesting technique and mine turned out absolutely delicious!
You do not need to peel the skin of Kabocha, and I actually really enjoy the texture of the skin as much as the inside.
1/3 Kabocha pumpkin, seeded and cut into large bite size pieces (you do not need to peel the skin)
1 tablespoons sugar
1 tablespoons water
2 tablespoons sake
1.5 tablespoons mirin
1 tablespoon soy sauce
1. Place Kabocha pieces in a single layer in a pot.
2. Sprinkle sugar over Kabocha. Wait for a half hour to one hour until Kabocha gives out water (or sweats).
3. Add water, sake, and mirin. Boil and then turn down to low heat. Add soy sauce and continue to cook covered over low heat for 10 to 15 minutes or so until Kabocha is cooked through. Check occasionally to prevent the Kabocha from burning as it’s cooked with a small amount of liquid.
ホクホクかぼちゃの煮付け
かぼちゃ、買ったらやっぱりコレを作らないとダメでしょう。
と、個人的な意見で、かぼちゃの煮付けも作りました。
考えてみたら、日本にいた頃はかぼちゃの煮ものって特に好きではありませんでした。
でも何十年も食べないと食べたくなるもの（苦笑）？
いろいろレシピを見ましたが、コチラのレシピを参考にしながらちょっぴり私なりにアレンジで作ってみました。
こちらのレシピ、ちょっとしたコツがあって面白いなあ、と思ったのがきっかけですが、本当に美味しく出来上がってびっくり（笑）！
これまで食べていたかぼちゃの煮ものは、どちらかというと水分が多い感じ。
コレは水分が少なく、ホクホク、といった出来上がり。
ちょっと最後にカラメライズされたたれがくっついたところなんて、最高でした～。
個人の好みが分かれるところなのでしょうが、私はこの水分が少ないほくほくかぼちゃが好みかも。

ちなみに少ない水分でしっかり味をつけて煮るので、煮物、というよりは、煮つけと呼びたい出来上がりでしたよ。
