I like curry, but I usually use pre-made store bought curry paste.
They taste pretty good and it’s simply easy and fast.
But once in a while I want to make curry from scratch and I was in a mood like that a few weekends ago.
It’s not an easy task to make tasty curry without meat or dairy products, but I think I succeeded with this one!
The curry was served with brown rice, roasted Brussels sprouts, and roasted and spiced acorn squash.
I coated the acorn squash with maple syrup before sprinkling spices, so the right balance of the spiciness and the sweetness made this squash extra yummy!
canola oil
1 onion, chopped
6 slices of ginger, chopped
2 tablespoons chopped garlic
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon turmeric
1/4 teaspoon cayenne pepper
3 whole cloves
8 whole cardamom
1 cinnamon stick
1 tablespoon tomato paste
2~3 tablespoons fig jam
1 cup unsweetened apple sauce
2 tablespoons cashew nuts
1 bay leaf
about 1 cup soy milk
1 cup water
12 grape tomatoes
white vinegar
soy sauce
spiced maple acorn squash
– canola oil
– 1/2 acorn squash, sliced
– salt and pepper
– 2 tablespoons maple syrup
– paprika
1. Make curry. Cook onion, ginger, and garlic in oil.
2. Add all the spices and continue to sautee for a few minutes.
3. Add tomato paste, fig jam, apple sauce, nuts, bay leaf, and water. Boil and then turn to low heat. Simmer.
4. Add soy milk and grape tomatoes.
5. Remove the cloves, cardamom, cinnamon stick, and bay leaf.
6. Puree the vegetables using a hand blender.
7. Add a splash of white vinegar and soy sauce.
8. Make spiced maple acorn squash. Coat squash with oil. Salt and pepper. Roast in 400F oven until cooked through.
9. Drizzle maple syrup. Sprinkle paprika. Sprinkle salt and pepper if needed.

カレールーを使わないカレーを作りたくって、挑戦。
しかも、肉、乳製品を使わない、と決めたので、コクを出すのに一苦労しました。
出来てすぐは、イマイチ、と思ったのですが、テリー大絶賛してくれて。
次の日に食べてみたら、美味し。
お皿なめてしまいました。。。
実はこういうこと多々。作ってる最中に味見をし過ぎて、舌が弱ってしまうのかな、というのが私の推測ですが、どうなんでしょうね。
ご飯にこのカレー、そして、ローストした芽キャベツに、ローストしてスパイスとメープルシロップで甘辛く味付けしたどんぐりかぼちゃを付け合わせました。
どんぐりかぼちゃ、そのままだと、ちょっと味が薄いので、自分的には、こうやってしっかり味付けするのが好み。
下の写真(使いまわしてます(苦笑))は近所のスーパーのかぼちゃ・スクオッシュ売り場のものですが、どんぐりかぼちゃ、どれか分かりますか~?

写真も、なんて可愛いカボチャ達。
どれでしょうか、こんなに種類あるのにビックリですが、どれも美味しいのかなぁ?

カレー作り楽しかったですよ。
少しずつ味をみながら調味料を足していくという工程が多分好きなんでしょうね。
どんぐりかぼちゃ、右下のフロアに置いてある箱に入ったのです。
確かに言われてみればどんぐりみたいな形です。
種類、いろいろありますよね。
味はほんとそれぞれかなり違います。
今のところお気に入りはバターナッツ(左下のベージュ色の)とこのどんぐりかぼちゃ。
その横のかぼちゃみたいだけれど帽子がのっかったみたいなバターカップ、というのは試してみたいものの一つです♪
