Dry Rub Portobello Steak with Black Grape Salsa
The idea came from the dry rub frank steak with corn salsa found in the most recent edition of the Bon Appetit magazine I picked up at the San Francisco airport for my flight.
My version turned into something very different, but I’m very proud of my vegan version.
So flavorful and fresh!
This salsa is delicious with chips, too!
Dry Rub Portobello Steak with Black Grape Salsa
2 portobello mushrooms
dry rub
– 2 tablespoon sugar
– 1 teaspoon cayenne pepper
– 1 teaspoon granulated garlic
– 1 teaspoon mustard powder
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1/2 teaspoon coriander
– salt and pepper
canola oil
grape salsa
– 1/2 cup grapes, cut in half
– 1/2 cup chopped tomato
– 3~5 jalapeno slices, chopped (I used the ones from a jar but fresh jalapenos are just fine, too)
– 1 tablespoon cilantro
– 1 tablespoon finely chopped red onion
– lime juice from 1/2 lime
– sugar
– salt and pepper
1. Make dry rub. Combine all the ingredients in a bowl. Coat mushrooms with the rub. Drizzle some oil to help the rub adhere.
2. Cook the mushrooms in a pan both sides (or grill).
3. Make salsa. Combine all the ingredients.
4. Slice the mushrooms. Sprinkle salt and pepper if needed. Serve with salsa.
きのこスパイスステーキ、葡萄サルサのせ
以前は雑誌、数冊好きなものがあって、毎月購入していた時期もあるのですが、
アメリカの雑誌、ここ数年どんどん内容・ページともに薄くなってきたような気がします。
なんだか広告ばっかりで、買っても数分で読み終わってしまう、ということで、もう購読しないようになりました。
流行っているものも、最近はインターネットに情報は豊富にありますから、雑誌を買わないから乗り遅れる、ということもありませんもんね。
（ちなみに、日本の雑誌（料理でもファッションでも）は充実してますよね～。ちょっと高めですが値段の分、いえいえそれより中身が濃いと思います。帰国すると帰りの空港で雑誌を買うのがいつも楽しみです。）。
それでも、長めのフライトの時にはやっぱり雑誌を買ってしまいます。
先日サンフランシスコへ行った時、フライトは３時間半。
微妙なところでしたが、やっぱり行きと帰りと一冊ずつ空港で雑誌を購入。
相変わらず薄かったですが（悲）、それでも、いくつか料理アイデアを見つけました。
そのうちの一つがこれ。
っていうか、オリジナルと私バージョンがかなり違ってしまいましたが。。。
雑誌は、牛肉のスパイスステーキに、焦がしとうもろこしサルサのせ。
私のは大きなきのこ、ポートベロきのこのスパイスステーキに、葡萄サルサのせ。
昔メキシコで買って持って帰ってきたお皿を久々に使いました～。
葡萄サルサ、とっても美味しくできました。
チップスと一緒に食べるのもグッドです。
