Vegan Ramen
I’ve been experimenting to make vegan ramen for a while.
I feel this one is definitely the best I’ve made so far and I will definitely make again.
You don’t really need any special ingredients to make this vegan ramen, except for “kiridashi kombu”, which I would not recommend skipping, as it’s really important in creating depth in this soup.
You should be able to find it at many Japanese grocery stores, and possibly at some general Asian stores, hopefully.
soup
– canola oil
– 3 cloves garlic, cut in half
– 1 onion, sliced
– 2 cups of water
– 2 3 inch x 3 inch kiridashi kombu pieces
– 2 cups soy milk
– 1 ~ 1.5 tablespoons sugar
– 1 ~ 1.5 tablespoons soy sauce
– salt
– white pepper
fresh ramen noodle, cooked
umeboshi (Japanese salted plum: optional)
green onion, chopped
red ginger
roasted seaweed
sesame oil (optional)
1. Sautee garlic and onion in oil. Continue to cook until the onion caramelizes.
2. Add water and kombu. Cook over medium-low heat for 30 minutes. Remove the onion and the kombu.
3. Puree garlic in the soup by using a hand blender.
4. Add soy milk, sugar, soy sauce, salt, and pepper.
5. Serve cooked ramen noodle in the soup. Place umeboshi (optional), green onion, red ginger, and roasted seaweed. Add a few drops of sesame oil (optional).
豚骨風ヴィーガンラーメン
ヴィーガンラーメンは何度か挑戦しているのですが、コレ、とっても満足な出来だったので、ブログに記録することに。
スープは、カラメライズした玉ねぎ、にんにく、切だし昆布、豆乳が主役。
後、ちょこちょこっと調味料を足しただけ。
そして、仕上げは(というか決めは)、ホワイトペッパー。
ホワイトペッパーって子供のころはこればっかりだった気がするのですが、ここ最近使ってなくって、
この久しぶりの味が懐かしかったりしてます。
このヴィーガンラーメン、テリーにも大大好評で、いっぱいお代わりして食べてくれました。
紅ショウガは必須ですが、個人的には梅干しも最高!
先日日本食料品店で買った、はちみつ梅干しを入れましたが、これを崩しながら食べるのが、すっごく気に入ってしまいました。
ラーメン、今回はちゃんと生麺も使ったのですが、やっぱりインスタントとは違う満足度になりますね~。
スープを全部飲み干すとこんな小鳥が登場しま~す。
外側にも内側にもびっしり模様が入っているところが好き。
アメリカで買ったのですが、メイド・イン・ジャパン、でした。
言われてみれば、ポップな柄は日本っぽいね。

とってもおいしそうなラーメン!
近所の菜食レストランにヴィーガン・ラーメンがあるので、食べたくなるとそこへ行ってましたが、家で作れるんですね。
玉ねぎを飴色になるまで炒める気力があるときに、作ってみたいです。
どんぶりも素敵。
さすが外国の器はおしゃれ~、と思ってたら、日本製とは!?
ラーメンが入ってると縁の柄が、一見、中華の模様にも見えるけれど、実はちょっと違うところがおしゃれですね。
日本で手に入るかな? 探してみます。

本当に美味しくできました。
ラーメン、ヴィーガンとは思えないコクがあってお勧めです。
どんぶり、そうなんですよ、知らずに購入しましたが、日本製。
中華な感じに見えなくもないですよね(笑)。
