Chipotle Soup with Potatoes and Blackened Corn
I knew chipotle was peppers but I didn’t know they are smoke-dried jalapeño peppers.
I was so excited when I bought my first “chipotle peppers in adobo sauce” can.
It’s spicy but also very flavorful!
The smoky flavor is so unique.
I wanted to add this wondeful flavor to my vegetable soup and the soup turned out to be absolutely delicious!

canola oil
2 cloves garlic, chopped
1 onion, chopped
1 orange pepper, chopped
2 cups bite sized pieces potatoes
32 oz vegetable stock
3 oz tomato paste
2 bay leaves
1 teaspoon dried oregano
1 tablespoons cumin
1 tablespoon sugar
salt and pepper
chipotle paste
– 1 pepper with 1 teaspoon adobo sauce from canned chipotle pepper in adobo sauce
– 2 small corn tortilla, torn into small pieces
2 ears corn, blackened
chopped cilantro
chopped green onion
sour cream – optional
1. Saute garlic, onion, pepper, and potatoes in oil for a few minutes.
2. Add vegetable stock. Boil and continue to cook over low heat. Add tomato paste, bay leaves, oregano, cumin, sugar, and salt and pepper.
3. Make chipotle paste. Combine the chipotle, adobo sauce, and tortilla. Puree them with a hand blender until it becomes creamy.
4. Whisk the chipotle paste into the soup. Add blackened corn.
5. Serve with cilantro, green onion, and sour cream (optional).
焦がしコーンとポテトのスパイシートマトスープ
チポトレとは、ハラペーニョペッパーを燻製にしたもの。
アドボソースというスパイスを利かせたトマトベースのソースに入れて売っている缶詰を初めて買ってみました。
なるほど、メキシコ料理でよく口にする味。
辛いのはもちろん、燻製の独特な風味が、メキシカン~!と、口の中で歌います(笑)。
野菜中心の具ですが、メインは、じゃがいもと焦がしたトウモロコシ。
小ねぎと香菜を散らして食べるのも美味しいですが、
そこに、さらに、サワークリームをぽとっと落として食べるのもイケます。
少しずつサワークリームを混ぜながら食べると、まろやかさと辛さが絡むところがよいですよ。
ちなみにこのルクルーゼ鍋、もう10年ほど前かな、に買ったものですが、やっぱり気に入っててよく使ってます。
小さいかな、と思って買ったものですが、二人にはちょうどいい大きさでした。
ルクルーゼ、と言ったら、このオレンジがいつも頭にあって購入しましたが、今でもこの色を選んでよかったなあ、と思ってます。
オレンジは中に入れるものが映える気がして。
次回は、丸い白が欲しいなあ、と思っているところ。
これは、もう数年思っているのですが、特に夏になると欲しい度が高まります。
