Kimchi Carbonara
I don’t make spaghetti alla caobonara very often, but I get craving for it once in a while.
A week or so ago I happened to have several egg yolks I needed to use, and I decided to make some.
Carbonara always tastes good, but this one was a bit special, as served with kimchi and roasted sweet seaweed.
I like to make my carbonara only with egg yolks instead of whole eggs, so it’s pretty rich, and the spiciness of the kimchi and the crunchy seaweed create a great balance.
I used “Surasang” brand’s”Seasoned Seaweed Original” I recently found at a local Korean grocery store. This is delicious. You can sprinkle this on rice, pasta, salad, or just eat it as a snack. It’s sweet and crunchy, and the sesame flavor is addictive.
By the way, it’s not always easy to find good kimchi where I live. I found this brand online and I’m thinking of trying. The original sounds good, but I’m particularly interested in their daikon one and the vegan one.
olive oil
1 clove garlic, chopped
100g linguine, cooked
2 egg yolks
1/2 cup Parmesan cheese, grated
salt and pepper
2 tablespoons kimchi, chopped
2 tablespoons Korean roasted sweet sheeweed1. Sautee garlic in olive oil.
2. Add cooked linguine.
3. Combine egg yolks and cheese in a small bowl. Remove the pan from the heat. Add the mixture to the pasta and quickly whisk until the eggs thicken. Salt and pepper.
4. Serve with kimchi and seaweed.
キムチカルボナーラ
久しぶりに食べたくなって、カルボナーラ。
というのも、卵白を使ったお菓子を作ったので、卵黄が残っていた、というのもあったんだけどね。
カルボナーラ、私は全卵じゃなくって卵黄だけで濃厚にするのが好みなのです。
パルメザンチーズもたっぷり入れて。
仕上げに、キムチと味のついた韓国海苔。
キムチの辛さと韓国海苔のぱりぱりさがカルボナーラと相性ばっちり。
すっごくすっごく美味しくって、食べ過ぎました。。。
食べる量は結構ちゃんと制限できる方だと思うのですが、
麺、特にスパゲッティには弱いんですよね。
自分のこと、分かっているので、大抵は食べる分だけ茹でるのですが、
今回は、次の日のランチの分も、と思ってちょっと多めに茹でたのがダメでした(苦笑)。完食。。。
それにしても、キムチ、コレ、という味のものがなかなか見つからなくって、
オンラインで人気のあるこのブランドのをオーダーしようか、と思案中。
オリジナルはもちろん、大根のキムチとヴィーガンキムチも気になっているところ~。
