Herbed Olive Sundried Tomato Biscotti
Biscotti is really fun to make.
I don’t know why I waited so long.
Well, I used to think it would be so difficult to make for some reason!
This time I wanted something a bit different and decided to make a savory version.
A lot of dried herbs, sundried tomatoes, and olives are packed in these cookies.
These will be perfect for a casual afternoon party when served with wine and cheese.
Herbed Olive Sundried Tomato Biscotti
100g all purpose flour
1 teaspoon dried Italian herbs
50g sugar
a pinch of salt
1 egg
1 tablespoon canola oil
1~2 tablespoons sundried tomatoes, chopped
1~2 tablespoons olives, cut in half
1. Preheat the oven to 350F.
2. Sift flour. Mix flour, herbs, sugar, salt, egg, and oil. Add sundried tomatoes and olives. Combine well using hands.
3. Form a long log. Place it on a baking pan lined with parchment paper. Bake in the oven for 20 minutes.
4. Remove from the oven. Let it cool. Slice. Bake for about 20 to 30 minutes at 300F.

今回はちょっと趣向を変えて?、塩味スナック系にしてみました。
たっぷりドライハーブに、サンドライトマト、そして、オリーブ。
これ、美味しい!
朝食に、おやつに、夜食に、とついつい手が伸びま~す。
砂糖を減らしていないので、甘じょっぱい味、とでも言ったらよいでしょうか(笑)。
見た目もなかなか良い感じ。
中に入っているものがしっかり見えるところが個人的にお気に入りなのです。
