Shungiku Spaghetti
Shungiku is a Japanese green leafy vegetable.
I think they sell it as tangho or tongho at the Asian grocery store where I usually buy it.
Shungiku literally means Spring Chrysanthemum, and this is also known as edible spring chrysanthemum greens.
It’s got a unique slightly bitter flavor and I absolutely love it.
You can use it for really anything, soup, salad, or pasta like this one.
olive oil
1 clove garlic, chopped
2 cups shungiku greens
2 tablespoons chopped roasted peppers
100g cooked spaghetti
1 teaspoon Dijon whole grain mustard
a pinch of sugar
salt and pepper
1. Cook garlic with oil.
2. Add shungiku greens and cook for a minute or so.
3. Add roasted peppers, spaghetti, mustard, sugar, salt, and pepper. Combine well. Add more olive oil if you prefer.
春菊マスタードスパゲッティ
私の好きなアジア食料品店に春菊が売っています。
初めて見つけた時はすっごく感激で、もちろん最初は鍋に使ったのですが、その後サラダにして食べたのが気に入って、
今回はスパゲッティとあわせてみました。
にんにく、春菊、ローストパプリカ、そして、仕上げに、オリーブオイルとマスタード。
シンプルながら美味~い♪
春菊は火を入れすぎず、半炒めぐらいがよいです。
ちなみに、上写真のグレー色のナプキンは、先日エプロンを買った時に、おまけでつけてくれたもの。
