Tomato basil Sandwich
I always thought my favorite carbs was the noodle, and then my second favorite would be the rice, and then the bread would take the last place.
But lately I’ve been eating much more bread.
Well, I’ve been baking more bread lately, mostly because Terry likes it, but I’ve definitely come to enjoy bread more.
I probably shouldn’t say I like bread but I should probably say I like MY bread.
It sounds kind of bad, but it’s the truth.
Homemade bread just tastes so much better!
So now I make and eat sandwiches more often as well.
Here is a sandwich I made a few weeks ago.
There are no meat or dairy products, but this sandwich is absolutely delicious!!
The flavors from the garlicky bean paste, basil leaves, tomatoes, and balsamic mustard all come together just wonderfully!
2 slices of bread, toasted
garlicky bean paste
– 1/2 can of great northern beans, drained
– 1 to 2 cloves of garlic, cooked
– olive oil
– sugar
– salt and pepper
3 to 4 basil leaves
2 slices of tomato
salt and pepper
daikon radish spouts
balsamic mustard
– 1 tablespoon Dijon mustard
– 1/2 tablespoon balsamic vinegar
– 1/2 tablespoon sugar
1. Make bean paste. Combine all the ingredients. Puree.
2. Make balsamic mustard. Combine all the ingredients.
3. Spread the bean paste on the toasts. Sandwich basil leaves, tomato slices, sprouts, and balsamic mustard. Salt and pepper.
