Fried Yam Noodles with Vegetables
I am a noodle lover.
I crave for noodles at least once a week.
I’m pretty sure the first dish I made by myself was some sort of a noodle dish.
I made fried noodle a lot as a teenager for a late night snack after my parents went to bed.
Today I’m posting fried noodles, but this is a bit different from what I used to make.
For this time I used yam noodles instead of regular Chinese noodle typically used for fried noodles.
Yam noodles are light and they are supposed to have fewer calories than regular noodles.
Because of that they are often called “healthy” food.
Healthy or not, I just love these noodles, mostly because of its unique texture.
canola oil
1 small onion, sliced
1/2 cabbage, chopped
1 cup mushroom, sliced
1/2 green onion, cut into bite size pieces
200 ~ 250g yam noodle, cooked in a boiling water for a few minutes, and then drained
salt and pepper
Japanese Okonomi sauce
aonori (Japanese dried seaweed)
red ginger
1. Sautee the vegetables with oil.
2. Add noodles. Continue to sautee.
3. Salt and pepper. Add sauce. Serve with aonori and red ginger.
糸こんにゃくde焼きそば
糸こんにゃく、先日また食べたくなって日本食料品店に走りました。
テリーは糸こんにゃくあまり好きじゃなさそうなので、一人ご飯。
糸こんにゃくの焼きそば、美味しい~!
野菜たっぷりで作って、仕上げにこれまたたっぷりと青海苔と生姜をかけていただきました。
ウスターソースじゃなくって、ちょっとこってりとお好みソースを今回は使いました。
糸こんにゃくにはこういうこってり系の方が似合う気がします。
この後、焼きそば病?にかかって、最近よく作ってますが(ふつうの麺で)、テリー、焼きそば結構好きみたいで、美味しい、とよく食べてくれます。
