Orange Cranberry Walnut Bread
Since I bought a pullman bread pan a few months ago, I’ve been making a pullman loaf almost every week.
But I still like to bake this artisan style bread once in a while too.
I added orange peel, dry cranberries, and walnut to this one and the combination was just perfect, really any time but particularly this holiday season!
Slice it and enjoy with butter for breakfast, lunch, or a snack.
Orange Cranberry Walnut Bread (makes 2 loaves) adapted from the Boule recipe in “Artisan Bread in Five Minutes A Day”
1.5 cup warm water
3/4 tablespoon dry yeast
3/4 teaspoon salt
3 cups all purpose flour
1/2 orange peel, cooked in boiling water for about half and hour or until tender, and then chopped finely
1/2 cup dry cranberries
1/2 cup chopped walnuts
1. Put warm water in a large container.
2. Add yeast and salt, and mix well.
3. Add flour and mix well with a wooden spoon.
4. Cover with a lid (not airtight) and let it rise in a container until it’s double in size, for about two hours.
5. Refrigerate overnight.
6. Roll the dough. Sprinkle orange peel, cranberries, and walnuts and roll it to form a loaf. Let it rise for 40 minutes.
7. Preheat oven with a pizza stone and a broiler pan inside to 450 F twenty minutes before baking.
8. Slash a line in the middle of the top with a sharp knife. Put the loaf on the pizza stone. Put a cup of hot water into the broiler pan.
9. Bake for 30 minutes.
オレンジクランベリー胡桃ブレッド
ちょっと前につくったブレッド。
最近は食パンを作ることが多いのですが(テリーすっごく好きなので)、こういうハード系パンもまだ時々作ってます。
このホリデーシーズンにはぴったりなオレンジクランベリー胡桃入り。
オレンジはなぜかこの辺りではピールが簡単に手に入らないので、皮を茹でて細かくチョップしたものを使ってます。
甘さがないので、自然な感じで自分的には気に入ってます。
後は、ドライクランベリーと胡桃。
ドライクランベリーはサラダに入れることが多いので常備してます。
このパン、基本はいつものレシピで、間違いない焼き上がり。
スライスしてバターをたっぷりつけて食べるのが美味し過ぎます(笑)。
