Swedish Meatball Breakfast

Good Morning and Merry Christmas!!

Terry and I were planning to go to a family gathering last night and today, but we are passing all these this year because Terry is sick…

So we are having a quiet Christmas celebration by ourselves at home.

Last night I wanted to make something special because it was Christmas Eve, but more so because I wanted to cheer up Terry who hasn’t been feeling well for a few days.

Well, I kind of knew what he would request, and I was right (lol).

When I told him I would make or get any food he wanted for dinner, he said “pineapple curry” from Bangkok Deli Restaurant or Swedish meatballs.

So I decided to go with Swedish meatballs.

The dinner was great and we enjoyed our meal that consisted of meatballs, gravy, mashed potatoes, lingonberry jam, and arugula salad.

This morning I wanted to have the meatballs again and decided to make another meal with the leftover.

Meatballs and mashed potatoes were placed on top of mushroom omelette and served with a homemade rosemary toast with butter and lingonberry jam.

It was so good! I don’t eat meat a lot any more, but I really enjoyed this big flavor breakfast plate.

クリスマスの朝食

今年のクリスマスは二人で静かに過ごしました。

というのも、テリー風邪を引いてしまったので。。。

本当はイブは義兄のうちで、そして、今日クリスマスは義父のうちに家族が集まる予定だったのですが、私たちは両方ともパス。

しょうがないです。

昨日イブの夜は、風邪のテリーになんでもいいから好きなものを作ってあげる、と言ったら、

“スエーデン風ミートボール”。

“作るのが面倒だったら、○○レストラン（近くのベトナムレストラン）のパイナップルカレーのテイクアウト。”

とのことだったので、頑張ってスエーデン風ミートボール、久しぶりに作りました。

というのも、最近こういう肉肉したものは作ってなかったので。。。

牛肉と豚肉で作るのが好きなのですが、豚のひき肉が見つからず、その代わりと言ってはなんですが、マッシュルームをたっぷり入れました。

スエーデン風ミートボールは、付け合わせも決まっていて、マッシュポテト、そして、リンゴンべりージャムを添えるのが期待されてます。

テリー、すっごく喜んでくれて、作り甲斐がありました。

で、今日の朝は、残り物で朝食（笑）。

一応朝食ということで、マッシュルームを入れた薄いオムレツを敷いた上に、マッシュポテト、ミートボール、そして、グレイビーをたっぷりかけて。

リンゴンべりージャムは、トーストにバターと一緒に塗って。

美味しかったですが、ちょっとボリュームがありましたね～。

卵は一人2つ使いましたが、1つで十分だったかな。

テリー今日は少し咳もおさまってきてるよう。

この週末で良くなりますように。。。
