Spaghetti Squash with Corn Onion Balls
Since the “spaghetti” is actually vegetable, I wanted to go all the way and create a very veggie dish. The roasted spaghetti squash was served with tomato sauce and corn onion balls. Yes, I’m still enjoying plant-based diet.
Squash Spaghetti with Corn Onion Balls
1 spaghetti squash, roasted,
your choice of tomato sauce
corn onion balls
– canola oil
– 2 cloves garlic, chopped
– 1 onion, chopped
– 1/2 cup canned corn
– salt and pepper
– flour
– canola oil
1. Make corn onion balls. Cook garlic and onion with oil in a pan. Place the sauteed garlic and onion in a bowl. Add corn, salt, and pepper. Add flour one tablespoon at a time until it achieves the right texture so that you can form small balls. Fry them in oil (350F) until golden brown.
2. Serve roasted spaghetti squash with tomato sauce and the corn onion balls.
コーン玉ねぎボールのせ素麺かぼちゃスパゲッティ
前回紹介した素麺かぼちゃ。
コレで何を作ったか紹介しますね、と言っていたのが、コチラです。
ちょっと早すぎ（笑）？
いやいや、書いてたら何か早く見せたくなっちゃって（笑）。
素麺かぼちゃは半分に切ってオーブンでロースト。
フォークでばさっばさっとひっかいていくと、こんな風に素麺（またはスパゲッティ）風に細長く取り出せます。
食感や味としては、麺とはちょっと違うのですが麺風に食べるのが面白いのです。
（食感としては、繊維～！！！！、です。）
今回はスパゲッティに似せて、トマトソースで。
ミートボール、といきたいところを、あえて、野菜ボールにしてみました。
ミートボール風だけど、肉も卵も入らない野菜ボール！
自然な玉ねぎとコーンの甘さが良いですよ～。
