Soba Noodle Salad with Lime Peanut Dressing
I like soba noodle salad and I make it often for a light lunch.
It’s so easy to make, as soba noodle cooks in only a few minutes, and you can just add any vegetables you have in your fridge and serve with your preferred dressing.
This time I was pretty hungry so I added cooked tofu to this salad; I roughly crumbled the tofu with a wooden spoon to give a ground meat like look and texture. The other ingredients are a cucumber and radishes. They were thinly sliced and lightly salted before added to the noodle.
I now make my salad dressing almost all the time. It doesn’t take a lot of time, and homemade ones taste so much better. And you know exactly what’s in your dressing, which is important to me.
This lime peanut dressing is creamy, rich, tangy, and tasty!
1 bundle (about 100g) of soba noodle, cooked and rinsed with cold water
1/3 package extra firm tofu, microwaved for 1~2 minutes, crumbled, cooked with ginger, garlic, soy sauce, sugar, crushed red pepper, salt, and pepper.
1/2 English cucumber, thinly sliced and lightly salted
4~6 radishes, thinly sliced and lightly salted
2 tablespoons chopped cilantro
2 tablespoons chopped green onion
lime peanut dressing
– 1~2 tablespoon peanut butter
– juice from 1/4 lime
– 1/2 tablespoon vinegar
– 1/2 ~ 1 tablespoon sugar
– 1 teaspoon soy sauce
– 1/2 tablespoon canola oil
– salt and pepper
1. Make dressing. Combine all the ingredients.
2. Make salad. Place soba noodle on a plate. On top of the noodle place the vegetables, tofu, cilantro and green onion.
3. Drizzle dressing over the salad.

味の想像つきますよね~。

蕎麦サラダは、蕎麦に、軽く塩もみしたきゅうりとラデイッシュ、そして、にんにくと生姜風味をつけてひき肉風に炒めた豆腐、そして、香菜、小ネギをたっぷりのせたもの。
いつもの蕎麦サラダもこんなちょっと変わったドレッシングでちょっとスペシャルな一品に変わりま~す。
