Kale Nectarine Kohlrabi Salad
Terry and I were at a chain restaurant that specializes in bread and sandwiches the other day.
We like their bread and soup, so we usually order a bowl of soup and a sandwich.
But last time we were there, we were in a mood for a lot of fresh veggies, and we decided to order a big bowl of soup and a big bowl of salad to share.
The soup was as tasty as usual, but we were very disappointed in the salad that they served.
It was mostly just iceberg lettuce and the lettuce did not look very fresh.
The dressing that came with the salad was also poorly made; it tasted like sugar water!
We looked at each other and made a quick decision; “Should we return this?” “Yes.”
Terry took it back to the kitchen, and they asked him what was wrong with the salad.
We looked at each other again, and whispered “everything!”
It’s so sad to see restaurants serve something like this and charge you almost $10.
No wonder salads do not gain well-deserved popularity.
Here is my kale nectarine kohlrabi salad I made a few weeks ago when I was able to get beautiful fresh kale and kohlrabi at the local farmers market.
In this salad you can also find dry cranberries, red onion slices, and hemp seeds.
I really don’t think it is that hard to make a quality tasty salad like this at restaurants, but unfortunately, I have come to the conclusion that if I want to have good salad I should make it myself.
4~5 leaves of kale, torn into bite sized pieces
a pinch of salt
1 kohlrabi, peeled and julienned
1~2 nectarines, cut into bite sized pieces
1/4 red onion, thinly sliced
1/2 cup dried cranberries
1~2 tablespoons hemp seeds
mustard dressing
– 1 tablespoon white vinegar
– 1 tablespoon sugar
– 1/2 tablespoon canola oil
– 1/2 tablespoon Dijon mustard
– salt and pepper
1. Make dressing. Combine all the ingredients well.
2. Put kale in a bowl. Sprinkle salt and massage salt into kale with your hands. Add all the other salad ingredients. Serve with the dressing.
ケールとネクタリンとコルラビのサラダ
先日あるチェーンのサンドイッチショップへ行った時のこと。
ここのスープとパンが好きなので、軽い夕食に寄ったんですよね。
たまたまたっぷりと野菜を食べたい気分だったので、スープとサラダを注文。
スープには、美味しいバゲットがついてくるし。
サラダは、確かアジア風サラダを頼んだのですが、出てきたのは、何とも情けないよたれた感じのレタス。
しかも、レタスばっかし。
他の野菜はほとんど入ってないのです。
しかも、ドレッシングは、甘いだけで、全然風味ナシ。
こんな砂糖水みたいなドレッシングは初めてでした。
夫と顔を見合わせて、返しにいこうか、うん、そうしよう、ということで、夫がサラダを返しにいったんですね。
そうしたら、お店の人に、〝What’s wrong with it?”（何が悪かったですか？）、て聞かれたらしいです。
夫と私、顔を見合わせて、〝Everything!”（全てが！）、と。
お店の人には言わなかったのですが、二人で愕然としました。
こんなサラダを出していたら、お金は取れませんよ～。
10ドル近く出すんだったら、私たち、もうちょっとちゃんとしたサラダが欲しいのです。
で、前置きが長くなりましたが、そういう理由もあって、やっぱりうちで食べるごはんが美味しい、と改めて思います。
今日紹介のサラダ、ケール、コルラビ、ネクタリンがたっぷり。
そのほかにも、ヘンプシードというぷちぷちとした美味しいタネも入ってます。
ドレッシングは、お手製マスタード味。
